Pork and Sweet Potato Skewers and the Weekly Menu

Summertime is grilling time here on the farm, and I love trying new recipes.  This recipe uses marinated pork tenderloin, parboiled sweet potatoes, and chunks of fresh pineapple skewered together and grilled to tender, juicy perfection.  

Pork and Sweet Potato Skewers

These delicious kabobs or skewers are great for summer entertaining.  All the components can be made ahead of time.  When it is time to eat, simply add the ingredients to the skewers as the grill heats up, and they cook up in less than 15 minutes.

This was the first meal I made upon our return home from Greece last weekend.  I needed something easy, as I was suffering from jet lag and trying to catch up on my laundry and settle back into a routine.  We have been home a full week now, and it is time for our next weekly menu.

Tonight we are singing a remembrance Mass for Kirsten's birthday.  We are going out to dinner with the Pryrts afterward.  Tomorrow, Nicole has invited us, Anthony, and his girl, Mary, over for a Father's Day lunch. 

On Monday, we are meeting with Amy, Doug, Marissa, and Raechel to celebrate Frank at the River Crab restaurant.  Tuesday, Cathy, Sharon, and I are meeting with our Travel Agent for lunch to discuss some upcoming vacations, and then Karen is coming for dinner and a dip in the pool.

We leave again on early Friday morning for a long weekend in North Carolina for a scuba diving trip.  Our flight leaves at 6 AM, so we are staying at a hotel near the airport and will have dinner out on Thursday evening.
 
So I have a very abbreviated menu to share along with the recipe for these wonderful skewers.

Pork and Sweet Potato Skewers

Pork and Sweet Potato Skewers

Marinated pork tenderloin, parboiled sweet potatoes, and chunks of fresh pineapple skewered together and grilled to tender, juicy perfection.

Ingredients

  • 2 pork tenderloins, silverskin removed, cut into 1" cubes
  • 1 pineapple, peeled, cored, and cut into 1" cubes
  • 2-3 sweet potatoes, peeled and cut into 1" cubes
  • 2 c. pineapple juice
  • 3 T. hot honey
  • 2 T. Worcestershire sauce
  • 4 cloves garlic, minced

Instructions

  1. Place the pineapple juice, honey, Worcestershire sauce, and garlic in a large sealable plastic bag. Shake to combine, add the pork, release the air, and massage the marinade to cover the pork. Refrigerate for a few hours.
  2. Place the potatoes in a pan, cover with water, and bring to a boil over high heat. Reduce the heat, and simmer for about 5 minutes until potatoes are parboiled and easily skewered. Remove from heat, drain, and allow to cool.
  3. Alternate the pork, sweet potatoes, and pineapple onto skewers and grill for about 7-10 minutes, turning once, until grill marks are present, potatoes are tender, and the pork has reached an internal temperature of 145*.
