Strawberry Lemonade Cake #CakeSliceBakers

Tender yellow cake studded with strawberries, slathered with a lemon soak and then topped with a strawberry whipped cream frosting.  I threw on some sprinkles as it was my daughter, Jessica's, birthday cake and that calls for a celebration!

While the frosting with the sprinkles was very festive and well-loved by the frosting fans, it hid the beauty of this cake studded with strawberry halves.  You know me...I would have preferred a drizzle of glaze or a sprinkling of powdered sugar on this cake but if you are a frosting lover this Marshmallow frosting was a hit.


The Angel Face lit the candles and we all sang to Mama before cutting into and enjoying this delicious, unique cake.

Strawberry Lemonade Cake with Marshmallow Frosting

Strawberry Lemonade Cake with Marshmallow Frosting

Tender yellow cake studded with strawberries, slathered with a lemon soak and then topped with a strawberry whipped cream frosting.

  • 1 3/4 c. sugar, divided
  • zest and juice of 5 lemons
  • 1/2 c. olive oil
  • 2 eggs + 1 egg yolk
  • 2 2/3 c. flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. kosher salt
  • 1 c.water, room temperature
  • 2/3 c. sour cream, room temperature
  • 1 pt. strawberries, hulled and halved
Strawberry Marshmallow Frosting
  • 3 egg whites, room temperature
  • 3/4 c. sugar
  • 2 T. white corn syrup
  • 1/4 t. cream of tartar
  • pinch of salt
  • 1/2 c. strawberry jam
  • Sprinkles or Additional Strawberries for garnish, if desired


  1. Place 1 1/2 cup of the sugar and the lemon zest into the large bowl of a stand mixer fitted with the paddle attachment. Mix on low speed for a minute to infuse the sugar with the zest. Slowly add the olive oil, mixing until blended, then add the eggs and yolk, one at a time, mixing well after each.
  2. Whisk together the flour, baking powder, baking soda and salt. Stir in half of this mixture into the sugar mixture.
  3. Whisk together the water and sour cream. Stir in half of this mixture to the batter and then repeat with remaining flour and sour cream, scraping the bowl as needed to incorporate all ingredients.
  4. Pour the batter into a 9x13" pan that has been treated with baking spray. Place the strawberry halves, cut side down, on top of the batter, and bake in a preheated 350* oven for 45-50 minutes, until a skewer inserted in the center removes cleanly. Set aside to cool completely.
  5. While cake is baking and/or cooling, combine the remaining 1/4 c. sugar with the lemon juice in a small saucepan. Cook and stir over low heat until sugar is completely dissolved. Set aside to cool completely.
  6. When both the cake and lemon soak are cool, brush the lemon soak over the cake until absorbed.
  7. Top with the Strawberry Marshmallow Frosting and garnish as desired.
Strawberry Marshmallow Frosting
  1. Place the sugar, egg whites, and corn syrup in the bowl of a stand mixer fitted with the whisk attachment.
  2. Place the bowl over a pot of simmering water, making sure the water is not in contact with the bowl, and whisk by hand until thickened and frothy, the sugar is dissolved and the mixture has reached a temperature of 160*.
  3. Remove from heat and place onto the stand mixer. Add the cream of tartar and salt and whisk on medium speed until soft, glossy and cool to the touch, about 10 minutes.
  4. When the meringue is quite stiff and completely cool, remove from the mixer and stir in the jam.
  5. Frost the cooled cake and garnish as desired.

  1. Perfect for a birthday party! I loved the frosting but I do think the cake would be great as a coffee cake without it.

  2. I agree on the frosting. A nice light glaze after that lemon soak.
