Hot Beef Sundae

This fun idea is not only delicious, but it is a great way to use up your leftover beef and gravy.  A scoop of mashed potatoes and a small grape or cherry tomato serve as the ice cream and garnish.  

I love making pot roasts on lazy weekend days and include planned leftovers in my weekly menu.  Usually, that means pot pie, hot sandwiches, or soup.  This April Fools Day means these fun Hot Beef Sundaes will be on the table.

Hot Beef Sundae

Surprise your family with Sundaes for Dinner!!! Tomorrow is April 1. Turn your Sunday Pot Roast leftovers into a fun April Fools Prank with this Hot Beef Sundae......

Ingredients

  • 2 c. leftover mashed potatoes
  • 2 c. leftover shredded roast beef in gravy
  • 4 cherry or grape tomato

Instructions

  1. Rewarm the potatoes and Beef and Gravy.
  2. Add a little bit of the beef and gravy to the bottom of 4 sundae cups.
  3. Add a 1/2 cup scoop of mashed potatoes to each sundae cup.
  4. Divide the remaining beef and gravy and place on top of the mashed potatoes in each cup.
  5. Top each with a tomato and serve
