F is for Fajitas

This bowl is a perfect way to enjoy Fajitas that are Gluten-Free, healthy, and colorful.  A great way to serve your family a rainbow of foods that are nutritious and delicious.

F is for Fajitas.  It is also for Favorite, Fun, and Festive.  This is one of my family's favorite dinners.  They love it because it is fun and feels like you're attending a fiesta.  I love it because it is easy, healthy and nutritious.

We are working our way through the alphabet this year, one letter every other Wednesday, making a recipe that either starts with the featured letter or contains a main ingredient that starts with the letter. This week's letter is F.  Sounds kind of fish to me LOL.  Let's see what fantastic, fruity, flavorful foods everyone is sharing......

Chicken Fajita Bowl

Chicken Fajita Bowl

This bowl is a perfect way to enjoy Fajitas that are Gluten-Free, healthy, and colorful. A great way to serve your family a rainbow of foods that are nutritious and delicious.

Ingredients

Chicken and Bowl
  • Juice of one lime
  • 1 T. olive oil
  • 2 cloves garlic, minced
  • 1/4 t. crushed red pepper, more to taste
  • 1 t. cumin
  • large pinch of salt
  • 2 lbs of boneless, skinless chicken thighs
  • 8 mini sweet bell peppers, cut into slices
  • 4 c. chopped romaine lettuce
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • chopped red onion, for garnish, if desired
  • 2 avocados, pitted and sliced
Rice
  • 1/2 c. jasmine rice
  • 1 c. chicken stock
  • 1 clove garlic, minced
  • juice of 1 lime
Dressing
  • 2 T. olive oil
  • juice of 2 limes
  • 1 clove garlic, minced
  • pinch of brown sugar
  • pinch of cumin
  • salt and pepper, to taste

Instructions

Chicken and Bowl
  1. Combine the lime juice, oil, garlic, crushed red pepper, cumin, and salt in a large plastic bag that seals.
  2. Add the chicken and pepper slices. Seal, remove air and massage to coat the chicken and peppers. Refrigerate for 30 minutes. (make rice and dressing during this interval)
  3. Place a large skillet over medium-high heat until hot. Add the chicken thighs and cook until browned on both sides and an internal temperature of 165* is reached. Transfer to a cutting board and set aside.
  4. Add the peppers to the pan and cook until softened and slightly charred. Set aside.
  5. Toss the lettuce with the dressing.
  6. Place 1 cup of lettuce in the bottom of each bowl. Divide the beans, corn, avocado, and rice between the bowls and arrange over the lettuce. Slice the chicken thighs and add one to the center of each bowl along with 1/4 of the peppers. Sprinkle with red onion, if using.
Rice
  1. Combine the rice, chicken stock, and garlic in a medium pot over high heat.
  2. Bring to a boil, reduce heat, cover, and simmer for 20-30 minutes until liquid is absorbed and rice is tender.
  3. Squeeze the lime juice over the rice and toss to fluff.
Dressing
  1. Place the oil, lime juice, garlic, brown sugar, cumin, salt and pepper in a small bowl and whisk until emulsified.
