Chocolate Orange Pots de Creme #SpringSweetsWeek

Candied Orange Slices

You do not have to serve these wonderful little puddings with a candied orange slice but they are so easy to make and so darn delicious you will be happy you did.

The original recipe called for candied orange peel but I had these gorgeous blood oranges so I decided to candy slices of them instead.    I also swapped out light cream instead of the mixture of milk and heavy cream asked for in the recipe and substituted semi sweet chocolate chips for the chopped bittersweet chocolate.

Chocolate Orange Pots de Creme with Candied Blood Orange Garnish

Deep, dark and delicious, these little Pots de Creme are flavored with Orange Liqueur and Orange Zest, then topped with a Candied Orange Slice, a sprinkle of Sea Salt and a dollop of Whipped Cream. It is rich and decadent and an amazing finish to your next in home date night.

Ingredients

Candied Blood Orange Slices
  • 1 blood orange, peel intact, thinly sliced
  • 1 c. sugar
  • 3/4 c. water
Chocolate Orange Pots de Creme
  • 1 1/4 c. light cream (1/2 and 1/2)
  • 1 T. Grand Marnier
  • 1/2 t. vanilla paste
  • 1 t. finely grated orange peel
  • 1/2 c. semi sweet chocolate chips
  • 4 egg yolks
  • 3 T. sugar
  • Whipped Cream for serving

Instructions

Candied Blood Orange Slices
  1. Combine the water and sugar in a saucepan over medium heat. Bring to a boil and stir until sugar dissolves. Add the orange slices and simmer for about 10 minutes, until slices are translucent.
  2. Remove the slices to a baking sheet, covered in parchment or silicone mat. Bake in a preheated 250* oven for 1 hour. Let cool on baking sheet before removing for use or storage in a plastic container.
Pots de Creme
  1. Combine the light cream, liqueur, vanilla and orange zest into a heavy saucepan. Place over medium high heat and bring to a low boil.
  2. Remove from heat and stir in the chocolate chips until melted and smooth.
  3. Whisk the egg yolks and sugar in a bowl until pale yellow, about 2 minutes using a stand mixer.
  4. Whisk the egg mixture into the chocolate mixture and then strain into a 2 cup measuring cup.
  5. Divide into 2 (8 oz) custard cups and place the cups into a baking dish. Add enough hot water to the baking dish to come halfway up the sides of the custard cups.
  6. Cover tightly with foil and bake in a preheated 350* oven for 40 minutes, until custard is set. Remove custard cups from the water and place into the refrigerator until cooled.
  7. Cover with plastic wrap and return to the refrigerator for 6 hours or overnight.
  8. Garnish with a Candied Blood Orange Slice and a dollop of Whipped Cream
