Maple Doodles #ChristmasCookies

This is my final recipe for Christmas Cookie Week but I am not done baking so stay tuned throughout the next few weeks as I share more cookies, breads, and sweet treats in anticipation of the Holiday Season.......

Maple Doodles

These are a great Christmas Cookie for many reasons.  
  1. The recipe is easy and fun to make.  Roll your cookie dough balls in cinnamon brown sugar and use a glass to gently press them down.  
  2. It makes a whole slew of cookies.  5 dozen wonderful cookies ready in no time.
  3. They are flat and easily packaged for shipping and/or giving.  No need to worry about sprinkles coming off or chocolate kisses being squished.
  4. They freeze well.  This means you can make these now, place them in the freezer in individual gift packages and just pull them out when heading to a holiday gathering or to send to school for the kid's teachers.
  5. Santa loves them.  How do I know?  Well, when I left those cookies out for him, there was nary a crumb left and I got a really great Christmas gift that year!!

These cookies bake up crisp on the outside and soft and chewy on the inside.  I will be including them on my tray when I go to my sister in law's Annual Cookie Exchange this year.

Maple Doodles

Snicker Doodle and Maple Cookies collide in these delicious cookies perfect for Christmas or anytime you have a hankering for a tasty treat.

Ingredients

  • 1/2 c. light brown sugar
  • 1 T. cinnamon
  • 1/2 c. vegetable shortening
  • 4 T. butter, room temperature
  • 1 1/2 c. granulated sugar
  • 2 eggs, room temperature
  • 1/2 c. pure maple syrup
  • 1 t. vanilla
  • 3 c. flour
  • 1 T. baking powder
  • large pinch of salt

Instructions

  1. Combine the brown sugar and cinnamon in a shallow bowl. Set aside.
  2. In large bowl of stand mixer cream together the shortening, butter and sugar until creamy.
  3. Add the eggs, one at a time, beating well after each.
  4. Stir in the syrup and vanilla.
  5. With the mixer on low speed, add the flour, baking powder and salt until incorporated.
  6. Increase speed and mix until well blended.
  7. Using a small cookie scoop form the dough into balls and roll each ball in the cinnamon sugar.
  8. Place onto baking sheets that have been lined with parchment paper or a silicone mat. Use the bottom of a glass to gently press down and flatten the cookies.
  9. Bake in a preheated 350* oven for 12-14 minutes, rotating after 6-7 minutes.
  10. Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
