I happened to have some blackberries on hand but you could easily use any berries that you have for this BBQ Sauce.  This Strawberry Rhubarb BBQ sauce would work equally as well for these sandwiches or you can just make the recipe I'm sharing today using blueberries, raspberries or even a mixture.  Perhaps you have some leftover fruit salad that you can turn into BBQ Sauce.

I piled the chicken on making this a definite knife and fork type sandwich.  I guess I could have made 2 smaller sandwiches but the chicken was so good and I really didn't want another bun.

I'm glad I went with a savory recipe for this month's event.  I fondly remembered this Blackberry Glazed Chicken that I shared with you last year and knew that the blackberries would make a great BBQ Sauce too.

Instant Pot Shredded Chicken with Blackberry Jalapeno BBQ Sauce

This Chicken drenched in Blackberry Jalapeno BBQ Sauce is quick, easy and oh so delicious. Pile high onto a bun add a slice of cheese and some bacon strips. This is a great alternative to burgers when looking for a quick and easy dinner.

Ingredients

  • 12 oz. blackberries
  • 1/4 c. sugar
  • Juice of 1 lemon
  • 4 T. ketchup
  • 3 T. balsamic vinegar
  • 2 T. molasses
  • 2 T. honey mustard
  • 1 chicken bouillon cube
  • 1 T. Worcestershire Sauce
  • 1/4 t. cumin
  • salt and pepper, to taste
  • 2 lbs. boneless, skinless chicken thighs
  • 1 lg. jalapeno, seeded and thinly sliced
  • 1/2 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 T. + 2 t. cornstarch
  • 1 T. water
  • Colby Jack Cheese, if desired
  • 12 slices, cooked bacon, if desired
  • 6 hamburger buns

Instructions

  1. Combine the blackberries, lemon juice and sugar in a sauce pan.  Cook over medium heat, until berries release their juices and soften, about 7 minutes.
  2. Pour into a blender, allow to cool and then puree.  Add the ketchup, vinegar, molasses, mustard, chicken bouillon, Worcestershire sauce and cumin to the blender and puree until smooth.  Taste and season with salt and pepper.
  3. Place chicken into the Instant pot and pour 1/3 of the blackberry mixture over the chicken.  Layer the onion, jalapeno and garlic on top of the chicken and cook on high pressure for 15 minutes.
  4. Meanwhile pour remaining blackberry mixture back into the saucepan.  Make a slurry of the cornstarch and water.  Bring the blackberry mixture to a boil and stir in the slurry.  Reduce heat to medium and cook, stirring until BBQ sauce is thickened.  Set aside.
  5. When chicken is done cooking use quick release method to release the steam and open the pot.  Use two forks to shred the chicken.  Add the shredded chicken to the BBQ sauce and reheat if necessary.  
  6. Serve on hamburger buns topped with cheese and bacon, if desired.
