BBQ Oysters with Garlic Herb Sauce #FishFridayFoodies

These oysters are so easy to prepare, just scrub and put onto the grill.  After 5 minutes, remove from grill and they will open up easily with just a butter knife.  Add a dollop of Herb Compound Butter and you have a delicious appetizer to serve while the rest of the meal is put onto the grill.

This month, I asked the Foodies to share some oyster recipes.  I thought perhaps we would get an oyster stuffing recipe in time for Thanksgiving preparation but I don't see any on the list.  So I'm still in search of a good oyster stuffing, if you have one please include a link to it in the comments below.


I happen to love oysters.  I have served them raw on the half shell, baked with bacon in Oysters Casino and, of course, in the classic Oysters Rockefeller.  But even if you are not an oyster fan you are still going to want to look at this recipe because this Herb Compound Butter is the BOMB!!

It can be used on any fish dish.  It makes a wonderful garlic bread.  Put a dollop in your next bowl of minestrone and you will think you created a whole new recipe.  You are going to want to have this butter in your refrigerator at all times.  And, go ahead, try them on oysters......you just think you don't like them.......


The butter goes together in a jiffy using a food processor.  Wrap it up and put it in the refrigerator for up to a week before using it.  The oysters are wonderful, no need to shuck them at all until they are cooked and the shell opens easily.  You can add a little pat of butter onto each or melt it and drizzle it on.  Your choice.

ingredients:

  • 1 dozen fresh oysters
  • 1 stick butter, room temperature
  • 1/4 c. parsley leaves
  • 1/4 c. basil leaves
  • 1 clove garlic
  • 1 t. lemon zest
  • salt and pepper, to taste

How to cook BBQ Oysters

  1. Soak the oysters in cold salted water for a few minutes and then scrub to release any sand.  
  2. Place the butter, parsley, basil, garlic, zest, salt and pepper into the bowl of a food processor and pulse until well combined.  Spoon onto a piece of plastic wrap and shape into a log.  Butter can be made a week ahead of time and refrigerated.
  3. Place the oysters, cup side down, onto a grill preheated to medium heat.   Cover the grill and let the oysters steam for only 2-3 minutes.  They will open slightly but will not open completely like clam or mussels.  Remove from the grill and let cool until they can be handled safely, cradling them in a towel held in your had.  Use a butter knife to open the shells and a sharp knife to cut the oyster from the shell retaining as much liquid in the cup of the oyster as possible.
  4. Place a small dab of herb butter onto each hot oyster and serve.
