Southwestern Turkey Soup #SoupSaturdaySwappers

Turn that leftover turkey into a completely different meal by combining it with the flavors of the Southwest.

My friend Karen of Karen's Kitchen Stories is hosting this month's edition of Soup Saturday Swappers.  Karen chose the theme "Starting with Leftovers".  Perfect for this time of year!

I often make soup with my leftover turkey carcass and have shared that recipe in the past. It is a very good recipe but I was happy when Karen chose this theme so I could step out of my turkey soup rut and make something different.  


This Southwestern soup is perfect. It changes up the flavors enough that you don't even realize you are eating leftovers.  

I also did something else different this year.  I made my turkey stock in the instant pot.  Amaaaaazing!!  I really do like my instant pot.  So you lucky folks get two recipes today for the price of one.



Let's start off with the Instant Pot turkey stock.......

Instant Pot Turkey Stock

Don't throw away that turkey carcass or those vegetable scraps. Put them into your Instant Pot and you will have a wonderful batch of turkey stock in no time.
prep time: 10 minscook time: 1 hourtotal time: 1 hours and 10 mins

ingredients:

1 meaty turkey carcass
1 stalk celery, washed and broken in half
1-2 carrots, washed and broken in half
1 bay leaf
peels and ends of one onion
salt and pepper, to taste

instructions

Break up the turkey carcass so that it fits into your Instant Pot.  I have the largest Instant Pot so I only had to break mine in half.

Add the celery, carrots, onion scraps, bay leaf, salt and pepper.  Add water to cover the ingredients being careful not to go past the maximum fill line of the Instant Pot.

Pressure cook on high for one hour using the manual setting.  Allow pressure to release naturally before opening the pot. 

Remove the carcass from the pot.  Remove all meat from carcass for use in another application.  This meat can be frozen until ready to use.

Strain the vegetables from the stock.  I ended up with 3 quarts of stock.  I used 2 quarts for my soup and froze the remaining quart for use in another application.

Southwestern Turkey Soup

Turn that leftover turkey into a completely different meal by combining it with the flavors of the Southwest.

ingredients:

1 small sweet onion, chopped
1 jalapeno, seeded and minced
1 clove garlic, minced
1 t. olive oil
2 qts. turkey or chicken stock
2 t. cumin
2 t. chili powder
3-4 cups leftover turkey, chopped into bite size pieces
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can diced tomatoes with their juices
1 (4 oz) can green chiles 
1 (15 oz) can sweet corn
shredded Mexican cheese blend and sour cream for garnish, if desired

instructions:

Heat oil in large soup pot.  Add the onions, jalapeno and garlic, Cook and stir until onions start to soften.

Add the stock, cumin, chili powder, turkey, both beans, tomatoes, chiles and corn.  Bring to a boil, reduce heat and simmer for 30 minutes.

Serve garnished with shredded cheese and sour cream, if desired.

  1. I never thought of using the Instant Pot when making turkey stock. Great idea. Just thinking about your delicious soup takes the chill off....ha! You used every ingredient I love.

  3. Don't have an instant pot, but love that you can make stock so quickly with it. I do mine the old-fashioned way, top of the stove, simmer for a few hours and wait... Also love your twist on the soup, never thought of using the leftover turkey for a Mexican inspired soup.

    1. Yes, I have always simmered mine stove top as well but this worked out pretty handy. I threw it in the instant pot, set the timer and left for the day. When I got home it was cooked and cooled.
