October Happenings and a Cheese Burger Casserole

I cannot believe it is already October 1st.  Before you know it Christmas will be here and we will be ringing in a New Year.  It boggles my mind how quickly time flies.



I'm just stopping in today to share a wonderful casserole that will take care of the Cheese Burger hankering you get when the weather is more conducive to baking than grilling.  I'm also going to give you a sneak preview of what I have planned this month.

I discovered this recipe by Girl Gone Mom during our Back to School Recipe Round Up.  I adapted ti slightly and put it together for a weeknight meal.  It is rich, filling, budget friendly, quick and delicious.  Perfect for Back to School, Family Friendly meals.  Enjoy........

Cheese Burger Casserole

prep time: 5 minscook time: 30 minstotal time: 35 mins
This casserole is rich, filling, budget friendly, quick and delicious. Perfect for Back to School, Family Friendly meals.

ingredients:

1 lb. ground beef
salt and pepper, to taste
1/2 small sweet onion, diced
1/2 c. ketchup
1 T. mustard
1 tomato, diced
chopped dill pickles, to taste
1 lb. frozen tater tots
8 oz. Velveeta Cheese
1 c. milk
1 c. shredded Colby Jack Cheese

instructions:

Season ground beef with salt and pepper.  Brown in a skillet over med high heat until crumbly and cooked through, about 5 minutes.  Add onions and cook for another 2-3 minutes. Remove from heat. Drain fat, if necessary and stir in the ketchup and mustard.  Put into the bottom of a 2 qt. casserole.

Sprinkle with the tomatoes and pickles.  Layer the potatoes over all.

In a sauce pan over med high heat stir the velveeta cheese and milk until hot, bubbly and melted. Pour over the top of the potatoes.  Sprinkle with the shredded cheese and bake in a preheated 425* oven for 20 minutes until hot, bubbly and slightly browned.
