Grilled Chicken with Balsamic Peach Glaze
Boneless, skinless chicken breasts basted with an easy peach and balsamic vinegar glaze for a quick and tasty dinner.
Ingredients
- 2 boneless, skinless chicken breasts
- salt and pepper, to taste
- 1/4 c. peach preserves
- 2 T. Balsamic vinegar
Instructions
- Season the chicken breasts with salt and pepper. Place onto a grill over med-high heat and cook for about 6 minutes. Flip and cook for another 6 minutes.
- While chicken is cooking, combine the jam and the vinegar in a small saucepan. Cook and stir over low heat until jam is melted and ingredients are combined. Remove from heat and set aside.
- Brush the glaze onto the chicken and flip. Cook for another minute or two. Then brush the top with the remaining glaze and flip again. Cook for 1-2 minutes, until the glaze is set and the chicken has an internal temperature of 165*.
