We eat a lot of chicken in this household.  It is easily the most often served protein for lunch and dinner.   I am always looking for different ways to prepare it so my family doesn't revolt when it is placed in front of them for the 4th time in a week.

I served this Balsamic Peach Glazed Chicken with the Jalapeno Popper Potato Salad that I shared on Wednesday.  They worked very well together, and I heard nary a complaint when it was chicken for dinner again.

Grilled Chicken with Balsamic Peach Glaze

Grilled Chicken with Balsamic Peach Glaze

Boneless, skinless chicken breasts basted with an easy peach and balsamic vinegar glaze for a quick and tasty dinner.

Prep time: 5 MinCook time: 20 MinTotal time: 25 Min

Ingredients

  • 2 boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 1/4 c. peach preserves
  • 2 T. Balsamic vinegar

Instructions

  1. Season the chicken breasts with salt and pepper. Place onto a grill over med-high heat and cook for about 6 minutes. Flip and cook for another 6 minutes.
  2. While chicken is cooking, combine the jam and the vinegar in a small saucepan. Cook and stir over low heat until jam is melted and ingredients are combined. Remove from heat and set aside.
  3. Brush the glaze onto the chicken and flip. Cook for another minute or two. Then brush the top with the remaining glaze and flip again. Cook for 1-2 minutes, until the glaze is set and the chicken has an internal temperature of 165*.

  2. I'm putting peach preserves on my pickup list but I'm guessing it'd work with blueberry, apple, cherry or just about any, right?
