Irish Tea Cake and a Book Review

This simple butter cake sprinkled with powdered sugar is not only for St. Pat's Day, it also made an amazing Birthday cake for my brother.

Each year I invite my brother over for a birthday dinner. We always have Corned Beef as his birthday falls on St. Pat's Day.  I change it up with the sides that I offer and I always have a birthday dessert so we can sing to him.  This year I decided to make this Irish Tea Cake.

We did sing Happy Birthday even though I forgot candles.  I almost forgot to take a photo of the cake once it was sliced.  It's my brother's fault....I tend to celebrate his birthday a bit too much LOL.....

Verity by Colleen Hoover

I decided to share this cake with you now because I just finished another novel by Colleen Hoover.  Verity is the name of an author who is involved in a car accident and is now bedridden.  Her husband, Jeremy, seeks out author Lowell Ashton and hires her to finish the last 3 novels in the series that Verity was writing.

I picked this book up in the morning.  I opene.d it around 1 pm, I took a break to make dinner and went right back to reading.  I finished it around 11 pm.  I could not put it down.  That being said I hated this book.  Not the writing.  The writing was fantastic.  It was the entire premise of the story that I hated but that didn't stop me from biting hard from the first sentence and holding on tight as Hoover reeled me right in.

This book reminded me of Stephen King before he got so wierd or even more wierd I guess I should say.  In fact, this book, in some ways reminded me of Misery...it's not the same at all but it had the same "I can't read anymore but I can't put it down" feel.  It was like watching a horror movie through openings in your fingers when you cover your eyes.

Anyway, during this novel, Jeremy finds out that it is Lowells birthday and bakes her a cake.  Since I had this cake recipe waiting to share and it had been a birthday cake I thought it would be a good segue into the novel.

This is the second novel that I read by Hoover.  I previously read It Ends With Us and I have ordered up It Starts With Us from the library.  

If you like suspense and drama you will enjoy this novel even as you hate it.......

Irish Tea Cake

This simple butter cake sprinkled with powdered sugar is not only for St. Pat's Day, it also made an amazing Birthday cake for my brother.

Ingredients

  • 1 stick butter, room temperature
  • 1 c. sugar
  • 2 eggs
  • 1 1/2 t. vanilla
  • 1 3/4 c. flour
  • 2 t. baking powder
  • pinch of salt
  • 1/2 c. milk
  • Powdered Sugar for sprinkling

Instructions

  1. In the large bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugar until light and fluffy.
  2. Add the eggs, one at a time, beating well after each. Stir in the vanilla.
  3. Combine the flour, baking powder and salt. With mixer on low add half to the butter mixture. Stir in the milk and then the remaining flour mixture until incorporated. Increase speed and mix well adding another Tablespoon of milk if batter is too thick.
  4. Spread the batter into a round cake pan that has been treated with baking spray and place in a preheated 350* oven.
  5. Bake for 30-35 minutes, until a skewer inserted in the center of the cake removes cleanly.
  6. Let cool in pan on a wire rack. When cool, turn out onto a plate and sprinkle with powdered sugar for serving.
