Slow Cooker Sunday Gravy #MultiCookerMonday

Chunks of pork and sweet Italian sausage slow cooked all day long in a savory tomato sauce.  Put it into the slow cooker and walk away until it is time to boil the pasta and set the table.

I used to love nothing better than to have a lazy Sunday where I could stay home, put some sauce onto the stove and let it slowly simmer all day long while I putzed about the house.  This is commonly referred to as Sunday Gravy.  

Then COVID struck and for over a year now we have been staying home, putzing and have all the time in the world to cook because life as we knew it ended.  Slowly folks are getting back to work and the world is starting to turn again.  And then there are all of the folks who are first responders or in the medical field who have been busier than ever while the rest of us lament not being busy enough.  The grass is always greener on the other side......

So as life returns to normal and for those folks who are still busier than all get out....I have a Sunday Gravy recipe just for you.

Slow Cooker Sunday Gravy

Slow Cooker Sunday Gravy

Chunks of pork and sweet Italian sausage slow cooked all day long in a savory tomato sauce. Put it into the slow cooker and walk away until it is time to boil the pasta and set the table.

Ingredients

  • 1 T. olive oil
  • 1 lb. pork stew meat
  • salt and pepper, to taste
  • 1 lb. sweet Italian sausages
  • 1 onion, coarsely chopped
  • 6 cloves garlic, minced
  • 2 carrots, scraped and sliced into 1/2" rounds
  • 1/2 c. dry red wine
  • 1 qt. tomatoes
  • 2 T. tomato paste
  • 2 sprigs thyme
  • 1 sprig rosemary
  • 2 lbs. pasta cooked per package directions
  • grated parmesan for sprinkling

Instructions

  1. Heat the olive oil in a skillet over med high heat.  Season the pork stew meat with salt and pepper and sear in the oil until browned all over, transfer to the crock of the slow cooker.
  2. Sear the sausage in the same pan and transfer to the slow cooker.  Add the onions, garlic and carrots to ths skillet and cook for a minute until fragrant.  Add the wine and cook stirring, scraping up any browned bits stuck to the bottom of the pan.  Cook and stir until wine is mostly evaporated.  Add 1/2 of the tomatoes and all of the juices to the pan using a wooden spoon to break the tomatoes into bite size pieces.  Pour the remaining tomatoes into a food processor and puree into a sauce.  Add this to the skillet along with the tomato paste and 1/2 c. water.  Bring to a boil and pour over the meat in the slow cooker.  Add the thyme and rosemary to the slow cooker, cover and cook on low heat for 6-8 hrs. 
  3. Remove the thyme and rosemary sprigs and discard.  Remove the sausage and cut into chunks.  Shred the pork chunks.....they should fall right apart when stirred with a wooden spoon.  Return the sausage to the sauce and serve over pasta, passing the Parmesan cheese.
