This sandwich was a spur of the moment idea when making breakfast one morning. I had some Ciabatta Rolls and planned on using them for my Pannini. I don't have a Pannini Press so I used my grilling skillet and use my cast iron skillet as a weight to press it down and get those beautiful grill marks.
I had lots of cheese in my refrigerator so I used a slice each of Muenster, American, Colby Jack and Provolone. Then I fried an egg and placed it on top.
This is definitely not a grab and go sandwich but if you have time to sit down with a knife and fork and enjoy a leisurely breakfast then this is the recipe for you.

Yield: 1 sandwich
Grilled Cheese Pannini with Egg
Four different kinds of cheese melted in a Ciabatta Roll and topped with a sunny side up egg....Breakfast has never been so delicious.
Prep time: 5 MCook time: 10 MTotal time: 15 M
Ingredients:
- 1 Ciabatta Roll
- Butter, room temperature
- 1 Slice American Cheese
- 1 Slice Provolone Cheese
- 1 Slice Colby Jack Cheese
- 1 Slice Muenster Cheese
- 1 egg
- salt and pepper, to taste
Instructions:
- Split the Ciabatta roll in half and butter the outsides. Place one half onto a pannini press or grill pan. Top with the cheese and the top of the bun, buttered side up. Close the press or use a heavy pan to weigh down the sandwich.
- If using a grill pan you will want med heat. Cook until the cheese starts to melt and grill marks appear on the bottom of the bun. Flip over and cook until cheese is melted and grill marks appear on the other side.
- If using a pannini press follow manufacturers instructions.
- Meanwhile, melt a teaspoon of butter in a small skillet over med high heat. Crack the egg into a custard cup and then slide it into the skillet. Season with salt and pepper, cover and cook to desired degree of doneness.
- Place the egg on top of the grilled pannini and serve.
