Chocolate Cinnamon Crinkle Cookies #NationalCookieDay

These fudgy chocolate cookies with the warmth of cinnamon are a great addition to your Christmas Cookie platter.

Erin, of The Spiffy Cookie, invited us to celebrate National Cookie Day with her today.  Perfect timing with the Holidays fast approaching.  Let's take a look at what everyone brought to the party.....

I like making crinkle cookies.  They are easy and so festive looking.  These cookies are like biting into a piece of fudge....sooooo good.


The secret to Crinkle Cookies is making sure they have a thick coating of powdered sugar by rolling them twice before moving them onto the baking sheet.


That way when the crack open while baking you are left with that beautiful contraction of colors and the cookies look as if they were caught in a snow storm.

Christmas Crinkles

These fudgy chocolate cookies with the warmth of cinnamon are a great addition to your Christmas Cookie platter.

ingredients:

  • 1 1/2 c. flour
  • 3/4 c. baking cocoa
  • 2 t. instant coffee granules
  • 1 1/2 t. baking powder
  • 1 t. cinnamon
  • pinch of salt
  • 1/2 c. butter, room temperature
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 t. vanilla
  • Powdered Sugar

instructions:

How to cook Christmas Crinkles

  1. Sift together the flour, cocoa, instant coffee, baking powder, cinnamon and salt.  Set aside.
  2. In large bowl of stand mixer, fitted with the paddle attachment, cream together the butter and sugar.  Add the eggs one at a time, beating well after each, scrape down the bowl and stir in the vanilla.  Turn mixer speed to low and gradually add the flour mixture until incorporated.  Cover the bowl and place in the refrigerator for at least one hour.  You can leave it for up to one day but allow it to set out for 30 minutes or the dough will be too stiff to work.
  3. Shape the dough into one inch balls and roll each ball in powdered sugar until heavily coated.  Place onto a parchment or silicone mat covered baking sheet and bake in a preheated 350* oven for about 10 minutes, being careful not to over bake.  Let cool on baking sheets for about 5 minutes before moving to a wire rack to cool completely.
