Italian Sausage Burgers #KitchenMatrixCookingProject

Cam, of Culinary Adventures with Camilla, Karen of Karen's Kitchen Stories and I are still working our way through the Kitchen Matrix by Mark Bittman.


Each month one of us chooses themes and then each Tuesday we share our recipes for the theme chosen that week.

This month our themes were chosen by Karen.  Thus far, in September we have explored Slaw and Pears,  This week we are playing with burgers.


I think this is a wonderful theme with which to finish off the grilling season here in the Midwest.  After this month, our weather starts cooling, the leaves start changing and our appetites start leaning towards soothing, comforting soups and stews.  

But in September?  September those grills just keep on working.  We still have days warm enough to swim in the pool before evening comes bringing cooler temps and the enticing call of the hot tub is heard.


Bittman had numerous ideas for burgers using seafood, lamb or pork instead of the more common beef burger.

Let's take a look at which burgers appealed to Camilla and Karen......



I read through his recipes and decided on the Italian Sausage version.  I cheated though and instead of making my own Italian Sausage, I pulled out some links from my freezer and removed the meat from the casings.  

I formed the meat into patties, put them on the grill and then topped them with the traditional pepper/onion mixture that I love with my links.

Complete honesty here?  If you have bulk Italian sausage or you want to make your own....go for it and serve them up as patties.  But if you have Italian Sausage links?  Throw them on the grill and put them into hot dog buns, top them with your favorite condiments and wipe the juice from your chin.

Taking the meat from the casings caused the burgers to lose much of the moisture and flavor that I enjoy in an Italian Sausage Sandwich.

Italian Sausage Burgers

prep time: 10 minscook time: 10 minstotal time: 20 mins
Sweet Italian Sausage formed into patties and grilled to perfection. Top with sauteed onions, peppers and mustard and you have all the same wonderful flavors that you love in a fun, new, format.

ingredients:

1 lb. Italian Sausage, bulk or removed from casings
1 small, sweet onion, sliced
1 bell pepper, seeded and slice
1 T. butter
2 hamburger buns
lettuce, tomato, condiments as desired

instructions:

Form the sausage into 2 patties.  Heat a grill to med high and place the patties on the grill over direct heat.  Cook for 3-4 minutes per side until cooked through to an internal temperature of 165*.

While the burgers are grilling, melt the butter in a skillet over med high heat.  Add the onions and peppers to the skillet.  Cook and stir until fragrant and tender, about 5 minutes.

Place the patties onto hamburger buns and top with the onion/pepper mixture.

  1. How interesting about the casings. I've never actually cooked hot Italian sausage in the casings! I'll have to try cooking them as is. Great burger!

    1. Thanks Karen, I was surprised that the taste was so different eating them as burgers instead of links. Normally when I use bulk sausage it is mixed in a sauce or casserole so I never noticed.

  2. This is SO interesting. I don't know why I've never thought to take Italian sausage out of its casing and use it as a patty. I'm definitely trying that soon! Thanks for the inspiration.

    1. I would make sure the Italian Sausage is very flavorful or add more seasoning to it once it is out of the casings.
