Sweet Potato Casserole with Pretzel Pecan Streusel #NationalPretzelDay

This sweet potato casserole is easily made using canned, drained sweet potatoes and evaporated milk.  The pretzel streusel topping studded with dried cranberriesand pecans make this a perfect side dish for a special meal.

    When Jolene announced this event I started thinking about different pretzel recipes I have shared.  I have made pretzel breadsticks, caramel apple pretzels, peanut butter pretzel bars, beer pretzel nuggets, and nutty cracker jack pretzel treats.

    I have dipped pretzels in chocolate, used them as breading for chicken strips, and wrapped them around hotdogs.  

    As I was trying to decide what I should make to celebrate pretzels for this event, I was also planning my Easter Menu.  That's when it occured to me that the salty, crispness of pretzels would be a great addition in a streusel for my sweet potato casserole.

    Sweet Potato Casserole with Pretzel Pecan Streusel

    This sweet potato casserole is easily made using canned, drained sweet potatoes and evaporated milk. The pretzel streusel topping studded with dried cranberriesand pecans make this a perfect side dish for a special meal.

    Ingredients

    • 3 c. pretzel pieces or sticks
    • 1 c. pecans
    • 1/2 c. dried cranberries
    • 1/14 c. packed brown sugar, divided
    • 2 sticks butter, melted and divided
    • 1 (40 oz) can yams, drained
    • 1 (5 oz) can evaporated milk

    Instructions

    1. Place the pretzel pieces, pecans, dried cranberries, 3/4 c. of the brown sugar and half the butter into a food processor and pulse until streusel like consistency.
    2. In large bowl of stand mixer, fitted with the paddle attachment, mix the sweet potatoes, evaporated milk, remaining sugar and remaining butter, on low speed until well combined. Turn into a casserole that has been treated with cooking spray.
    3. Evenly sprinkle the streusel over the potaoes and bake in a preheated 350* oven for about half an hour until hot and bubbly.
