Instant Pot 13 Bean Soup with Ham #SundayFunday

Don't you hate it when you have a hankering for bean soup and have to wait 2 days to enjoy it?  Well, here's your solution.   Pull out your Instant Pot and enjoy a hearty, delicious bowl of soup in less than 2 hours.

Instant Pot 13 Bean and Ham Soup

Don't you hate it when you have a hankering for bean soup and have to wait 2 days to enjoy it? Well, here's your solution.  Pull out your Instant Pot and enjoy a hearty, delicious bowl of soup in less than 2 hours.

Ingredients

  • 1 meaty ham bone
  • 1 pkg. 13 bean mixture with flavoring packet
  • 2 t. vegetable oil
  • 1 small onion, diced
  • 2 carrots, scraped and sliced
  • 2 ribs celery, trimmed and sliced
  • 8 c. chicken stock
  • 1 bay leaf
  • 1 (15 oz) can diced tomatoes

Instructions

  1. Set the Instant Pot to the saute setting. When hot add the oil. Stir in the onion, carrots, and celery. Cook and stir until onions are fragrant and translucent, 3-4 minutes. Cancel cooking.
  2. Place the ham bone in the pot along with the beans, broth, bay leaf, contents of the seasoning packet, and the diced tomatoes with their juices. Seal the pot and cook on high pressure for 1 hour.
  3. Allow to release pressure naturally for 15 minutes and then use the quick release method before opening the pot, leaving the warm feature on.
  4. Remove the bone to a cutting board and remove any meat from the bone. Discard the bone and any fat or gristle. Remove the bay leaf. If you prefer a creamier soup, you can puree half of the solids in the Instant Pot using an immersion blender.
  5. Return the ham to the pot, stir to combine, taste, and season with additional cracked pepper, if desired.
