Mushroom Spaghetti inspired by Letters to Juliet #Movies and Munchies

This easy Mushroom Spaghetti is made in one pot.  Simply saute your vegetables, add your sauce and tomatoes and put the spaghetti into the pot dry.  It will cook as the flavors meld together for an easy, tasty meal.

One Pot Mushroom Spaghetti

I was inspired to make this pasta after watching Letters to Juliet for our Movies and Muchies this month.

Members of the now defunct FoodnFlix were sorry to see that group end so decided to continue under another name.  We chose Movies and Munchies as our moniker and we take turns choosing a film each month for us to watch and hopefully be inspired into the kitchen.

Letters to Juliet
This month Cam of Culinary Adventures with Camilla is hosting.  She chose the film Letters to Juliet and will gather together our recipes during the month and share a roundup of them all along with our reviews of the film.

Letters to Juliet is a fun, romantic comedy that gets it's inspiration of the real life Secretaries of Juliet.  We have all heard of Romeo and Juliet and the tragedy of love denied who took their lives in Verona, Italy when they were not allowed to live their lives together.  What you may not know is that people still travel to Juliet's home in Verona and leave letters about their love lives and requesting advice.  There are people who collect these letters each evening and send responses to the writers.

In this film, Sophie (Amanda Seyfried) travels to Italy with her Fiance (Gael Garcia Bernel) a chef who is going to research for his new restaurant.  Sophie imagines a romantic pre honeymoon trip and is disappointed when her fiance is serious about researching and has little time for her.

Sophie ends up at Juliet's wall and sees some women taking the letters and walking away with them, she follows and discovers the Secretaries of Juliet.  Intrigued she returns to the wall and inadvertently discovers a letter written 50 years earlier written by Claire (Vanessa Redgrave).

Sophie answers the letter and soon Claire and her grandson, Charlie (Christopher Egan) arrive in Verona to look for Claire's lost love. 

There was quite a bit of food inspiration.  When the film first starts Sophie is hand fed fresh spaghetti by her fiance.  When they first arrive in Verona her fiance is going to a conference about truffles and is very upset when Claire can't understand why he would want to sit in a class about mushrooms.  He corrects her, dispelling the notion that truffles are just a mushroom.

Mushrooms show up again at the end of the film convincing me that I wanted to make a pasta recipe that starred mushrooms.  

One Pot Mushroom Spaghetti

We were in the middle of a kitchen remodel and I had no range, using the side burner of my grill as my only stovetop.  So when I found this recipe for Mushroom Spaghetti that only required one pot from Prego, I was very excited.  I adapted the recipe using my homemade Farmstand Marinara that I canned last season.  I also added onion and garlic to the mushrooms during the saute.

Mushroom Spaghetti and Wine

We left the mess of the kitchen behind and enjoyed our dinner on the deck.  I opened a bottle of wine from Verona to pair with the pasta.  I will be writing more about that pairing in a later post so stay tuned for that........

One Pot Mushroom Spaghetti

One Pot Mushroom Spaghetti

This easy Mushroom Spaghetti is made in one pot. Simply saute your vegetables, add your sauce and tomatoes and put the spaghetti into the pot dry. It will cook as the flavors meld together for an easy, tasty meal.

Ingredients

  • 1 T. olive oil
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 12 oz. baby bella mushrooms, sliced
  • salt and pepper, to taste
  • 1/2 c. dry red wine
  • 1 qt. Marinara Sauce of choice, my recipe
  • 1 (15 oz) can diced tomatoes with juices
  • 2 c. water
  • 1 lb. dry spaghetti, broken in half

Instructions

  1. In large pot or dutch oven heat the oil over med high flame. Add the mushrooms, garlic and onions, season with salt and pepper.
  2. Cook until mushrooms release juices and onion is translucent.
  3. Add the wine and cook until nearly evaporated.
  4. Add the Marinara, tomatoes and their juices and the water to the pot and bring to a boil.
  5. Stir in the spaghetti, reduce heat to a simmer, cover and cook, stirring occasionally until pasta is tender and cooked to your liking.

    1. I would save it for when I have to use only one pot. It would be great if you were camping or having to work off of a hot plate but it is not the same as cooking the spaghetti separately and then saucing.
