Apple Tea Brined Chicken #AppleWeek

I think this was my favorite recipe created for this week long event.  It was so easy and the results were absolutely amazing.  I can't wait to share it but before I do, let's take a look at what the others are sharing with us today.


We were having company for dinner so I made 2 chickens.  The only difference between this recipe and any other recipe for roast chicken is the brine.  And Boy oh Boy, what a difference that makes!!

The biggest challenge I faced with this recipe was finding a pot big enough to brine two chickens.  It was close but I made it work.  


Once the brining is complete, dry them, season them with your favorite chicken rub and put them on the grill or in the oven to roast.  Pretty much a hands off operation.


The only other work involved is carving them up after they rest.  This chicken was so dang scrumptious.  Every little bit got eaten.  There were no leftovers which usually is a win in my book but in this case it was a disappointment.

ingredients:

For the Brine
  • 6 apple spiced tea ( I used Herbs of Autumn from Republic of Tea)
  • 4 c. water
  • 1 c. fine grain sugar (I used Bob's Red Mill)
  • 3/4 c. Kosher salt
  • 10 c. ice cubes
  • 3 limes
  • 1/2 c. chopped mint
  • 2 (3-4 lb) chickens
Roasting the Chicken
  • 2 T. olive oil
  • Your favorite chicken rub or seasonings

How to cook Apple Tea Brined Roast Chicken

Brining the Chicken
  1. Place the teabags and water into a pot large enough to fit the two chickens.  Place on a burner over med high heat and bring to a boil.  Remove from heat and allow the tea to steep for 5 minutes.  Remove and discard tea bags.
  2. Whisk in the sugar and salt until dissolved.  Add the ice, halve the limes, squeeze in the juice and add the lime halves to the pot.  Stir in the mint.  Place chickens in the brine adding more water to cover, if necessary.  Refrigerate at least two hours and up to overnight.
Roasting the Chicken
  1. Remove the chicken from the brine and pat dry.  Massage 1 Tablespoon of olive oil over each chicken and season as desired.  Tie together the legs with kitchen twine.
  2. Heat the grill or oven to 450*  Place the chickens onto racks set over baking pans or roasting pans, breast side up.  Roast for 1-1 1/2 hrs,  until crisp golden brown and an internal temperature of 165* is reached in the thickest part of the thigh.
  3. Let rest for 5 minutes prior to carving and serving.

  6. I brined chicken thighs for the event, but never thought to brine an entire chicken! I might have to do that this weekend when I have four hungry boys here for the weekend. Great idea.
