Since this was my final recipe of the week, I wanted to make sure it was a good one. What constitutes a good recipe in your mind?
To me, a good recipe is easy to prepare, beautiful to look at and, of course, delicious to eat. This salad meets all of those requirements.
Delicious grilled Pineapple, Peaches and Grapes are tossed with fresh Raspberries and Kiwis and served up with a yogurt dressing. It is beautiful to look at and tastes amazing.
The original recipe found in Cuisine at Home called for mixing Orange Marmalade with the yogurt. I mixed in some Grapefruit Jam from Tony's Sweet Eats. The Tony in question is our son and he makes some amazing jams. The Pink Paradise, made with Ruby Red Grapefruit, was perfect mixed with the vanilla yogurt as a dressing for this salad.
I think that this Lemon Shred Marmalade that I made would have been good in this dressing too. Really any slightly bitter marmalade or jam would be fine.

Grilled Fruit Salad

Nutritionists say you should "Eat a Rainbow" and I can't think of a better or more delicious way to do that than with this gorgeous Grilled Fruit Salad.
ingredients:
1 pineapple, cored, peeled and sliced into 1/2" thick rings
3 peaches, halved and pitted
1/2 lb. red grapes, left in clusters
3 kiwi, peeled and sliced
1/2 pint fresh raspberries
3/4 c. vanilla yogurt
2 T. Grapefruit Jam
instructions:
Place the pineapple rings, peach halves and grape clusters onto a vented grill pan and place onto your grill over high heat. Grill for about 3 minutes, turning the pineapple halfway through the grilling time, until the pineapple and peaches have grill marks and the grapes skins begin to split.
Cut the pineapple into chunks, slice the peaches and snip the grapes into small clusters. Arrange on a large platter. Scatter the kiwi and raspberries over the grilled fruits.
Whisk together the yogurt and jam. Drop in dollops over the salad and serve the remaining dressing at the table for those who like more.
