The first site, by Shared Appetite, contained 15 ideas including candied bacon S'mores and roasted berries S'mores. Does they sound delicious or what?! It also included one that used Oreo cookies in place of the Graham Crackers.
The second site, by The Kitchn, contained another 12 ideas including a savory tomato version (YUM) and a version replicating the Grasshopper, using chocolate grahams and chocolate mint candy.
I decided to grab ideas from each of them and my version of an Oreo Grasshopper Smore Bundt was born.
I made a Chocolate Mint Pound Cake batter and spread half into my prepared Bundt pan.
Sprinkled some crushed Mint Oreo Cookies in the center.
Spread the remaining batter over the cookies and baked it at 375* for 50 minutes.
Let it cool completely before placing it on a platter that I bought for my niece.
This cake was taken to her house warming party and the platter was part of her gift.
I poured on some Marshmallow Cream ice cream topping.
Garnished with some additional Mint Oreo Cookies and Voila!!
My creation was complete.
The cake got lots of oooohs and aaahs, unfortunately I was babysitting Melody and needed to take her home for a nap prior to the cake being served so I have no photos of the cake once it was sliced nor did I get a chance to taste it. Frank remained behind when I took Mel home so he did have some cake and he thought it was good so I'll have to take his word for it.
2 c. flour
1 1/2 c. sugar
3/4 c. baking cocoa
1 1/2 t. baking soda
1 t. salt
2/3 c. butter, softened
1 (16 oz) dairy sour cream
2 eggs
1/2 t. mint extract
1/2 t. mint extract
1 t. vanilla
8 Mint Oreos, crushed
1 jar Marshmallow Cream Ice Cream Topping.

Heat oven to 350*. Spray bundt pan with baking spray.
Stir together dry ingredients in large bowl of stand mixer. Add butter, sour cream, eggs, mint extract and vanilla. Beat on medium speed for a few minutes, until well blended. Batter will be thick. Spread half of the batter into the prepared pan, sprinkle with crushed oreos, top with remaining batter. Bake for 50-60 minutes or until a skewer inserted into the cake comes out clean. Cool for 10 minutes.
Turn out onto a cooling rack and allow to cool completely. Place on serving platter. Drizzle with Marshmallow Cream Ice Cream Topping and garnish with additional Oreos, if desired. Print Recipe

DeleteThere is a world of Oreos I have clearly not been exposed to. Mint Oreos?! Omg. I think we get gipped here in Canada. I'm pretty sure I have not seen those in the stores! I love the combo of chocolate and mint. It's one of my faves and your Bundt sounds and looks delicious!
