Yesterday at our house, as on most Mondays, was Meatless Monday and I made a terrific Grilled Asian Vegetable Pasta that I just had to share with you today. I was originally going to hang on to this until a slow blogging day and then share it BUT I was so dang impressed with the T-Lish Asian Sesame Dressing that I couldn't wait to share it with you.

We quite often have pasta with vegetables for Meatless Monday. It is fast, easy and my family are pasta addicts so I know it will be well received. Tonight's version couldn't be easier and it was sooooo good.
I tossed my veggies with some T-Lish Asian Sesame Dressing.
Threw it on the grill in a grill pan while the pasta boiled, tossing a few times while it cooked.
Poured it into a bowl.
Added the pasta and some more Asian Sesame Dressing.
Tossed and served.
Easy Peasy and Delicious.
A perfect Meatless Monday meal!
Grilled Asian Vegetable Pasta
1 c. broccoli florets
2 handfuls snow peas, trimmed
1 head bok choy, leaves and stems, cut into bite size pieces
1 pint cherry tomatoes (I used a mixture of colors)
1 red pepper, cored, seeded and cut into bite size pieces
1/2 + 1/3 Asian Sesame Dressing (I used T-Lish)
1 lb. thin spaghetti, cooked per package directions
Toss vegetables with 1/2 cup of dressing. Heat grill to med high. Pour veggies into a grill pan and grill until tender, 10- 15 minutes. Transfer to a large serving bowl, add pasta and 1/3 c. of the dressing. Toss to coat and serve. Print Recipe
