Avocado Chicken with Rice

We love Avocados in this house and enjoy them in Salads, as  Dips, made into Soup,  as Guacamole, on Sandwiches, and in Bowls.  Not to mention their appearance in nearly every Mexican Monday or Taco Tuesday and quite often for Breakfast in the form of Avocado Toast.

This is a quick, easy, and delicious dinner that I served up with some seasoned rice.  It took me less than half an hour from start to finish.

Avocado Chicken

Avocado Chicken

Boneless, Skinless Chicken Breast Cutlets cooked on the stovetop, covered with slices of Avocado, Shredded Cheese, and Bacon Bits, and placed under the broiler before serving.
Prep time: 10 MinCook time: 15 MinTotal time: 25 Min

Ingredients

  • 4 (4-6 oz) boneless, skinless chicken cutlets
  • 1 T. olive oil
  • seasoning salt to taste
  • 1 large avocado, pitted, peeled and sliced
  • 1/2 c. shredded Colby Jack Cheese
  • 1/4 c. bacon bits

Instructions

  1. Heat the olive oil in an oven-safe skillet over med-high heat.
  2. Sprinkle the Chicken with the Seasoning Salt and place into the hot skillet. Cook 3-5 minutes per side until golden brown and an internal temperature of 160* is reached.
  3. Divide the Avocado Slices and place onto each chicken cutlet. Sprinkle with 2 Tablespoons of the cheese and 1 T. of the bacon bits.
  4. Place under a broiler until the cheese is melted and bubbly. Serve immediately.

  2. I like how easy this recipe is. A doable one for my hubby and also he can cook it for himself. Protein rich main meal in a jiffy.
