We love Avocados in this house and enjoy them in Salads, as Dips, made into Soup, as Guacamole, on Sandwiches, and in Bowls. Not to mention their appearance in nearly every Mexican Monday or Taco Tuesday and quite often for Breakfast in the form of Avocado Toast.
This is a quick, easy, and delicious dinner that I served up with some seasoned rice. It took me less than half an hour from start to finish.
As this post goes live I am enjoying the first day of my Fall Colors Cruise with a stop in Newport, Rhode Island. I will share my trip with you when I return home so stay tuned.....
