I am hosting this week. I always get excited when October arrives. The weather starts to cool, the colors begin to change and the Holiday Season nears. The first Holiday we celebrate each year is Halloween. I love cooking up a Fall Dinner inspired by Halloween to share with my guests.

Pumpkin Deviled Eggs
These eggs celebrate Halloween in 2 ways. Not only are they "Deviled" but they include pumpkin in the filling. A little piece of pickle for the stem helps to make them look little pumpkins.

Ingredients
- 6 hard-boiled eggs
- 2 T. pumpkin puree
- 2 T. Mayonnaise
- 1 T. hot honey mustard
- 1/2 t. paprika
- salt and pepper, to taste
- 2 cornichon, cut into 6 pieces each
Instructions
- Cut the eggs in half crosswise. Remove the yolks to a food processor. Place the whites onto a serving platter.
- Add the pumpkin, mayonnaise, mustard, paprika, salt, and pepper. Puree until smooth.
- Spoon puree into a plastic bag. Snip off one corner of the bag and pipe the filling into the egg whites. Top each with a piece of cornichon as a stem.
Notes
I use my Instant Pot to hard cook my eggs using this method.
