Salt and Vinegar Roasted Potatoes
Are you a fan of Salt and Vinegar Potato Chips? If so, today is a happy day for you because I'm sharing a Roasted Potato Side Dish with all the flavors you love.

Ingredients
- 2 lbs. red new potatoes, cut into halves or quarters,depending on size
- 1 T. olive oil
- 1 T. red wine vinegar
- salt to taste
Instructions
- Whisk together the oil, vinegar and salt in a large bowl.
- Add the potatoes and toss to coat. Spread onto a baking sheet that has been lined with parchment or a silicone mat.
- Bake in a preheated 425* oven until golden brown and tender, about 20 minutes.

HUGE fan of salt and vinegar chips and I'm so excited to try these! I've got a bunch of balsamic vinegars that I bet would work great too.
