Pumpkin Oatmeal Bread

This pumpkin quick bread includes oats for extra texture, fiber, and nutrition.  I baked mine up in a jack-o-lantern pan that I pull out of storage and use each Halloween.

Pumpkin Oat Bread

This recipe made enough for this Jack-O-Lantern and to make a loaf.  You can make 2 loaves of quick bread if you don't have a decorative pan you would like to use.

Pumpkin Oat Bread

Pumpkin Oat Bread

This pumpkin quick bread includes oats for extra texture, fiber, and nutrition.

Ingredients

  • 3 c. flour
  • 1 c. old fashioned oats
  • 2 t. baking soda
  • 2 t. cinnaspice or pumpkin pie spice
  • 1/2 t. baking powder
  • pinch of salt
  • 3 eggs
  • 1 can (15 oz) pumpkin puree
  • 1 1/2 c. sugar
  • 1 c. milk
  • 1/2 c. canola oil
  • 1 c. chopped walnuts

Instructions

  1. Combine the flour, oats, baking soda, baking powder, salt, and spice in a bowl. Set aside.
  2. In the large bowl of a stand mixer, whisk together the eggs, pumpkin, milk, and oil. Add the flour mixture a little at a time on low speed until combined. Increase speed and mix just until incorporated.
  3. Pour into two loaf pans (or pans of choice) that have been treated with baking spray.
  4. Bake in a preheated 350* oven until a skewer inserted in the center removes cleanly. This took 50 minutes for the pumpkin pan and 75 minutes for the loaf pan in my oven.
