Chicken and Cranberry Risotto
Creamy Arborio rice seasoned and cooked to a creamy deliciousness, studded with dried cranberries and diced chicken.

Ingredients
- 2 boneless, skinless chicken breasts
- 3-4
- c. chicken broth
- salt and pepper, to taste
- 2 T. butter
- 1/2 Vidalia onion, diced
- 2 cloves garlic, minced
- 1 c. Arborio rice
- 1/2 c. dry white wine
- 1 1/2 t. Italian Herb seasoning
- 1 c. dried cranberries
- 2 oz. cream cheese
Instructions
- Place the chicken breasts and broth in a pot over med-high heat. Season with salt and pepper. Bring to a boil, reduce heat and simmer until breasts are cooked through, about 20-30 minutes.
- Remove the breasts from the broth and set aside to cool, leaving the broth on a simmer. When chicken is cool enough to handle cut into bite-size pieces.
- Melt the butter in a large skillet over medium-high heat. Add the onions, season with salt and pepper and cook until translucent and fragrant. Add the garlic and cook for another 30 seconds. Add the rice and cook, stirring, until coated and toasted.
- Add the wine and cook, stirring until absorbed. Stir in the Italian Herbs and dried cranberries.
- Start adding the broth, a ladle full at a time, to the skillet and allow to cook, stirring frequently, until mostly absorbed, the rice is tender and the cranberries are plump.
- Stir in the cream cheese, a bit at a time until melted and combined. Stir in the chicken, cook, stirring until the chicken is warmed through and serve.
