Woohoooo, it's grilling season!!! I love summer meals. During the Fall and Winter, we eat a lot of stews, soups, roasts, pastas, and casseroles. Come Spring and Summer our tastes and meals get lighter. Meats are grilled and placed onto salads or served with sides of garden fresh vegetables.
Today, I am sharing Honey BBQ Chicken Thighs. I served them on a salad but they would also be great with a side of cornbread and baked beans.
I decided to make a Honey BBQ Sauce because I had just finished reading a novel, In Praise of the Bees by Kristen Gleesen. This Historical Fiction is the first in a series featuring Women of Ireland. It is set in a community of nuns in 590 AD.
The Mother Superior, Mathair Gobnait, not only cares for the nuns in her charge, but she also is a healer who cares for people outside of her community and a honey farmer who has a unique relationship with her bees whose honey she uses in her healing remedies.
A young girl is found beaten nearly to death and is brought to Mathair Gobnait's community. She finally regains consciousness but has no memory of who she is or how she was so badly injured. They decide to call her Aine and as she heals she learns of their ways and comes to love this community to which she now belongs.
As Aine's memories start to return she realizes that she had been beaten and left for dead after her father, a minor king, and brother had been killed and believes that it was her cousin who was the next successor who killed them. She heads home to see vengeance.
This novel was inspired by real-life women who strained against prejudices held against them by society during the history of Ireland.
I had planned on grilling chicken for dinner and wanted to pay homage to this novel so I decided to make a Honey BBQ Sauce as a nod to Mathair Gobnait's bees. I grilled the chicken, liberally coating it with the sauce.
The recipe for the Honey BBQ Sauce will make more than you need for the number of thighs that I used but it will keep well in the refrigerator and will be delicious on grilled pork chops which is on my menu for later in the week.

Honey BBQ Chicken Thighs
Boneless, skinless chicken thighs slathered in a delectable, homemade Honey BBQ Sauce, is a great start to a meal. I used mine to top a Main Course Salad.

Ingredients
- 8 boneless, skinless Chicken Thighs
- 1 T. olive oil
- salt and pepper, to taste
- 4 cloves garlic, minced
- 1 c. ketchup
- 1/4 c. honey
- 1 T. Worcestershire sauce
- Hot sauce, to taste
- 2 T. brown sugar (I used dark brown)
- juice of 1/2 lemon
Instructions
- Place the olive oil, salt, and pepper into a plastic bag that seals. Add the chicken thighs, remove the air from the bag and seal. Massage the chicken to cover it all in the seasoned oil. Refrigerate until ready to grill.
- Place the garlic, ketchup, Worcestershire, hot sauce, honey, brown sugar and lemon juice in a small saucepan over medium heat and cook for about 5 minutes, stirring occasionally. Set aside until ready to grill.
- Heat a grill to medium-high heat. Add the chicken thighs and cook for about 3-4 minutes, flip and generously baste the cooked side with the Honey BBQ sauce. Cook for another 3-4 minutes, flip, and baste the other side with the sauce. Cook each sauced side for 2-3 minutes, until some charring occurs and the thighs are cooked through.
- Store any remaining sauce in the refrigerator for up to two weeks.
