Caramelized Onions

And right here is the difference between those store bought dips and this recipe.  This lucious pile of golden, caramelized, beautiful, sweet onions.  It is worth the half an hour it takes to get these onions ready to be made into the dip.

This makes 3 cups of dip but it stays good in the refrigerator for several days so it can be made ahead of time and enjoyed for quite a while.

You know that store bought onion dip that you purchase in the dairy case? You will never buy that again after you taste this homemade version.

Ingredients:

  • 2 T. butter
  • 2 lg. Vidalia onions, peeled, halved and thinly sliced
  • 1  1/2 c. sour cream
  • 1 (8oz) pkg, cream cheese, softened
  • handful of parsley leaves, chopped
  • 1/2 t. onion powder
  • 1/2 t. Worcestershire
  • salt and pepper, to taste

Instructions:

  1. Melt the butter in a large skillet over med heat.  Add the onions and cook, stirring occasionally, until golden brown and very fragrant, about 25 minutes.  Add 2 Tablespoons of water to the onions and cook, stirring, until evaporated, about 5 minutes.  Set aside to cool for 15 minutes, then coarsely chop the onions.
  2. Combine the sour cream, cream cheese, parsley, onion powder,  and Worcestershire sauce until smooth and creamy.  Stir in the onions and season with salt and pepper.  Serve immediately.  Refrigerate any leftovers.

  2. This makes me laugh because my stomach churns at the thought of those premade dips from the grocery store even though I've never tried one. This, however, sounds AMAZING. And I happen to have some extra onions I should use up soon.
