German Pancake with Easy Fruit Compote for #BreadBakers

I am pleased to announce that I am hosting our Bread Bakers event this month.  Of all the groups to which I belong, the Bread Bakers group is the one that takes me out of my comfort zone most often. I am very grateful to Stacy of Food Lust People Love for starting this group and for allowing me to be a part of it.

I asked to host this month because we celebrate National Pancake Week during the last week of February so I thought having pancakes as a theme would give our readers plenty of time to plan their own pancake celebration.

We are also sharing this post on Shrove Tuesday or Fat Tuesday as we call it.  Shrove Tuesday is the day before Ash Wednesday, when Christians world wide begin 40 days of abstinence and fasting for the Lenten Season leading up to Easter Sunday.

Tradition has us using up all of our flour, sugar, butter, eggs etc. to prepare ourselves for the fast. It is celebrated in different ways in different countries but there is always lots of feasting, fat eating and gorging.

Whether you indulge in Pancakes or Paczki or both I hope that you enjoy your celebration and wish you peace as we prepare for our Lord's death and resurrection.  


These German Pancakes, that I am sharing with you today, are perfect for National Pancake Week even if you are observing a Lenten Fast.  They are not overly sweet and they can be filled with fresh fruit rather than the compote that I am sharing with you today.


One pancake was plenty large enough for two adults and one toddler as today is also Toddler Tuesday in our household, or it would be if I were home.  As you read this, we are enjoying our final day in sunny California, visiting my brother and his family.  We leave to head home tomorrow morning.


If you abstain from meat on Ash Wednesday, this would make a wonderful Valentine's Day breakfast to share with your love tomorrow morning.

German Pancake with Easy Fruit Compote

3 eggs
1/2 c. flour
1/2 c. milk
pinch of salt
1/2 t. vanilla
2 T. butter
powdered sugar, if desired
1 c. frozen mixed fruit, thawed. I used a strawberry, blueberry, raspberry, mango blend
1/4 c. sugar
1/4 c. water
1/2  t. cinnamon

Place the eggs, flour, milk, salt and vanilla in a blender and blend until smooth.  Set aside.

Place the butter in a cast iron skillet and place it in the oven.  Preheat oven to 400*.  When oven is preheated, carefully remove skillet, using a potholder over the handle, and swirl the butter to coat the pan.  Pour the batter into the hot skillet and return to the oven.  Bake for about 15 minutes, until puffed and golden.

While pancake is baking, place the fruit, sugar, water and cinnamon in a small skillet. Bring to a boil, reduce heat and simmer until slightly thickened.  Transfer to a bowl and set aside.

Remove pancake from oven and transfer to a plate. Sprinkle with powdered sugar, if desired.  Serve with compote, fresh fruit or extra powdered sugar and lemon wedges.  Print Recipe

Apfelpfannkuchen #BreadBakers

I love learning about other cultures through food so when Stacy of Food Lust People Love and owner of the Facebook group, Bread Bakers, needed a host for this month, I gladly volunteered and chose the theme International Breads.

I set up the event and shared a list of breads and their origins, that I found on Wikepedia, for inspiration.  We have bakers from all over the world in this wonderful group so we often get bread recipes from their individual countries.  I thought it might be fun to expand our horizons and make breads from countries other than our own.


I had the Angel Face for a few days this month and she loves to help in the kitchen.  I decided to make German Apple Pancakes, in honor of Oktoberfest, for breakfast one morning. Here she is making a well in the dry ingredients so that we can add the wet ingredients.

Oktoberfest starts in a few days, September 16th, so it was a good opportunity to share some food culture with her.  Her Uncle Max had visited from Germany last May and she instantly fell in love with him so she has some understanding of people living far away in different countries.

The batter for these pancakes are the same consistency as that for crepes but with a lot less eggs.  You combine the wet and dry ingredients and then set it aside to rest while you prepare the apples.


Thinly slice three tart apples and toss with lemon juice, sugar, cinnamon and nutmeg. Saute for a couple of minutes before adding a little water and cooking until softened and water is evaporated.


Now comes the fun part. 
  1. Heat your pan, remove from heat and spray liberally with cooking spray, add a scant 1/3 c. batter to the pan and swirl to cover the bottom.
  2. Place onto a hot pad on the counter and arrange the apple slices over the batter.
  3. Pour another 1/3 c. batter over the apples and swirl to cover. Return pan to heat for a couple of minutes until edges are dry and holes start to appear over the top. Loosen with thin spatula that has been treated with cooking spray and shake the pan to make sure that the pancake moves easily without sticking.
  4. Slide from the pan onto a plate right side up.
  5. Place the pan over the pancake on the plate and (using a hot pad) flip the pancake back into the pan.
  6. Return pan to heat and cook underside for another couple of minutes.

Slide the finished pancake onto a clean plate, sprinkle with brown sugar and place in a warm oven while repeating this procedure 3 more times, adding each finished pancake onto the other with a layer of brown sugar between and topping the final pancake with brown sugar.


When the final layer is done, cut into quarters and serve.  I adapted this recipe from one found on the Food Network show, Sara's Secrets.  


This made a wonderful breakfast.  It is not overly sweet but sweet enough that no added syrup is necessary.  It would also be wonderful as a dessert topped with some ice cream or whipped cream.



Apfrelpfannkuchen (German Apple Pancakes)
adapted from Sara's Secrets by Jean Anderson and Heidi Wurz

1 1/4 c. flour
2 T. sugar
1 t. baking powder
pinch of salt
1 1/4 c. milk
1 egg
1 T. butter, melted
1/2 t. vanilla
3 tart apples (I used Paula Reds)
juice of 1 small lemon
2 T. sugar
1 t. cinnamon
1/4 t. nutmeg
2 T. butter
1/4 c. water
cooking spray
brown sugar for sprinkling

Sift together the flour, sugar, baking powder and salt into a bowl.  Make a well in the center of the dry ingredients.  Whisk together the milk, egg, melted butter and vanilla.  Pour into the well of the dry ingredients and whisk until smooth.  Cover and set aside to rest.

Peel and core the apples.  Cut into thin slices and place in a bowl.  Add the lemon juice, sugar, cinnamon and nutmeg.  Toss to coat.

Melt 2 T. butter over med high heat in a heavy skillet.  Add the apples and sauté for a minute or two. Add the water and cook, stirring occasionally, until water evaporates and apples are very tender. Remove to a plate to cool.

Heat a 10" omelet pan over med high heat for 3 or 4 minutes.  Remove from heat and spray liberally with cooking spray, coating the bottom and sides.  Add a scan 1/3 cup of the batter to the pan tilting and swirling so the bottom is covered.  Place the pan onto a hot pad on the counter and arrange 1/4 of the apple slices over the top of the batter.  Add another 1/3 cup batter and swirl and tip the pan to cover the apples.  Place the pan back onto the burner, reduce the heat to low and cook for 2 minutes, until the edges are dry and bubble holes begin to appear on the top of the pancake.  

Spray a thin spatula with cooking spray and run around the edges and under the bottom of the pancake.  Shake the pan, ensuring that the pancake moves freely, then slide the pancake, right side up onto a clean plate.  

Place the pan over the pancake and invert the plate and pan so that the uncooked side is not on the hot surface of the pan.  Return the pan to the burner over low heat and cook for another 2 minutes. 

Slide onto a clean plate, sprinkle with brown sugar and place in a warm oven or under a heat lamp, while repeating this process three more times.  Each time a pancake is complete, layer it on top of the previous pancake in the warming oven.

When the last pancake is complete, lay on top of the other 3, sprinkle with brown sugar, cut into quarters and serve.  Print Recipe

Oven Baked Tropical Pancakes for #BreadBakers

This month's Bread Bakers is brought to you by Mayuri of Mayuri's Jikoni.  Mayuri chose the theme of pancakes......YUM!!  Mayuri invited us to go sweet or savory, suggesting items like crepes, blinis and gozleme.  Yes, I had to look up gozleme too.  It is a traditional, savory Turkish flatbread.  Mayuri encouraged us to go global with our choices.


Since I have sunshine and blue skies dominating my mind this month as we get ready to head to Dominica for a dive vacation, I decided to go tropical with my pancake.  Since we are posting on Valentine's Day I made them into hearts and topped them with some red currant syrup.

A couple of years ago, Frank and I took a road trip through our home State, staying at different B&B's along the way.   Our last stop was in Pentwater, MI where we stayed at a lovely Bed and Breakfast called Pentwater Abbey.  The owner, Karen Way, served us a wonderful Baked Pancake and was gracious enough to share the recipe.  The recipe is a photocopy of a page from an undisclosed cookbook.  I wanted to give credit to the original source of this recipe for "Fruited Buttermilk Oven Pancakes", so I did a google search.  I found Karen's entry in the Michigan B&B association website where she gives credit to BHG.  No wonder it was so good. 


I decided to take this recipe and make it my own by adding the tropical flavors of Mango and Coconut.  How did it turn out?   I'll let my favorite, little Valentine show you.


These baked pancakes are perfect!  You can use any fruit you want.  Choose what is seasonal or what your family loves.  Choose for the holiday, strawberry and blueberry for 4th of July was my first thought.  Each pan makes 4-6 servings that are ready at one time so you don't have to worry about keeping the first batches warm while cooking up the rest.  


Tropical Baked Pancakes
adapted from Pentwater Abbey

1 1/2 c. flour
2 T. sugar
1 t. baking soda
1 t. baking powder
pinch of salt
1 egg, beaten
1 1/2 c. buttermilk
3 T. cooking oil
1 (15 oz) can diced mango, drained
1/2 c. shredded, sweetened coconut
Cinnamon Sugar (2 T. sugar + 1/2 t. cinnamon)

Combine flour, sugar, soda, baking powder and salt in a large bowl.  In a 2 c. measuring cup, combine the buttermilk, egg and cooking oil.  Pour into the dry ingredients all at once.  Stir until just mixed. Spread the batter in 15x10x1 jelly roll pan (cookie sheet) that has been treated with baking spray. Sprinkle the mango and coconut evenly over the batter and then sprinkle with the cinnamon sugar. Place into a preheated 350* oven for 12-15 minutes.  Pancake will spring back when touched and the edges will be lightly browned.  Cut into squares or desired shapes and serve. Print Recipe

Brain Booster Pancakes for #BreadBakers

Our host, Pavani, of Cook's Hideout, invited all of the Bread Bakers to make a "healthy" bread.  She left it up to the individual baker to decide what constituted a healthy bread.



As you are reading this post, I am on vacation visiting my brother and his family in California. I almost didn't participate this month because between the holidays and getting ready for vacation I wasn't sure I could fit in a bread making day as well.  Last Thursday, I was taking care of my Little Angel Face and decided to give her breakfast for lunch.  Grampy cooked up some bacon and I found this recipe for Brain Booster Pancakes at SuperHealthyKids.com.  Score!!!  I love when I can kill two birds with one stone and I really love that pancakes are considered a bread recipe.


These were quick to put together.  They are not a fluffy pancake but they are creamy tasting....not moist and not dense but still tasting creamy...I don't know how else to describe them.  They were very good and very filling and Melody LOVED them.


And so did Grampy.


And so will you!!

Brain Booster Pancakes
slightly adapted from SuperHealthyKids.com

1 1/4 c. almond milk
1 3/4 c. old fashioned oats
1/4 c. ground flaxseed
1 banana
1 T. honey
1 t. vanilla
1/2 t. cinnamon
pinch of salt
1 1/2 t. baking powder
2 eggs
1 T. coconut oil
blueberries

Place almond milk, oats, flaxseed, banana, honey, vanilla, cinnamon, salt, baking powder, eggs and coconut oil in a heavy duty blender.  Blend until oats are ground and mixture is well combined.

Heat griddle over med high heat.  Pour 1/4 c. batter onto the griddle for each pancake.  Add desired amount of blueberries onto each pancake while the first side cooks.  Let cook until golden brown about 2-3 minutes,flip and cook other side 2-3 minutes more.  Print Recipe

Countdown to 2017: Best Breakfasts

Today we are sharing our favorite breakfast recipes that we posted during the year.  Last year on this day we were posting our favorite breakfasts from 2015 and the year prior we shared our favorite Crockpot recipes.


Let's start with eggs again today.  One of my very favorites was this decadent, rich and comforting Waffles Benedict topped with a Poached Egg and smothered in a Creamy Sage Sauce.  Don't worry, I served up some healthier options as well, like this open faced breakfast sandwich or this spinach toast with egg.  Both of these were shared while I was on the Fast Metabolism Diet and are Phase 3 Friendly.  Feeling rustic and casual?  How about this filling, stick to your ribs sausage skillet topped with fried eggs? To round things out we went international with a Mexican breakfast bundt and an apple and onion frittata.

Phase 1 Friendly Buckwheat Pancakes with Fresh Peach Puree for #FoodieExtravaganza

Happy Wednesday and Happy Foodie Extravaganza Day.  Foodie Extravaganza is a monthly occurrence in which we take turns hosting and choosing a food to celebrate that is honored by a holiday during the month.  We find our choices at The Nibble. This month I want to thank Caroline of Caroline's Cooking for hosting but especially for choosing Pancakes.



National Pancake day is September 26th so you will be ready to celebrate with tons of delicous recipes that we are sharing with you today.  September is also National Breakfast month and National Whole Grain Month.  So Pancakes are the perfect choice and, if you have kids, is the perfect breakfast with which to send them to school, ready to start their day.

I don't have any children left at home but this was still a perfect choice for me.  Monday I began Round 2 of an eating plan called The Healthy Metabolism Diet.  This eating plan lasts 28 days and each week is divided into three phases.  Phase 1 that spans Monday and Tuesday each week requires you too eat lots of fruit and whole grains.  I started the plan off right on Monday morning with these hearty Buckwheat Pancakes smothered in Fresh Peach Puree and topped with Fresh Peach Slices.

This recipe makes 6 pancakes.  If you have leftover peach puree, as I did, refrigerate it for use in a smoothie for your snack during the day.  I am posting the recipe underneath which you will find all the other recipes posted to celebrate National Pancake Day.


Phase 1 Friendly Buckwheat Pancakes 
slightly adapted from The Fast Metabolism Diet Cookbook

1 c. buckwheat flour
1 t. cinnamon
1 egg white, beaten
1 c. rice milk
1 t. vanilla
1 t. agave nectar

For the Peach Puree

2 peaches, quartered
1 t. agave nectar
1/2 c. water

In small bowl combine the flour, cinnamon, egg white, rice milk, vanilla and agave just until combined.  Let rest for 5 minutes.  Preheat a griddle to 375* .  Pour pancake batter onto griddle making 6 pancakes (about 3 T. each) and cook until bottom is browned and top is starting to dry.  Flip and cook until other side is browned.

Cut one of the peach quarters into slices.  Place the remaining peaches, agave and water into a food processor or blender and puree until desired consistency.  Pour into a saucepan and heat through while pancakes are cooking.

Top each serving of pancakes with the puree and garnish with fresh peach slices.
