I Scream Cake for #FoodnFlix

Our fun feature film for this month was Hotel Transylvania 2, chosen by Kimberly of Coffee and Casseroles.  You can see her invitation post here.

Food 'n Flix

I had not seen the first Hotel Transylvania but I was still looking forward to watching this movie.  I love animated movies.  I guess I am still a kid at heart.

Hotel Transylvania 2 - #FoodnFlix August 2016

I ordered up the movie on demand and sat down with my notepad to keep track of the food.  I didn't think I would be writing too much because this is not considered a foodie movie but I was writing my little fingers to the bone!

Right off the bat there was champagne and a screaming wedding cake.  There was also:
  •  jello
  •  garlic
  •  ice cream with anchovies (I was tempted)
  • monster ball soup
  • birthday cake
  • porridge head and brain burger
  • a fancy blue cocktail (you know I wanted to create that)
  • cakes with monsters
  • cupcakes
  • a pinata filled with candy
  • another cake while on the monster adventure
  • avocado
  • venison (one of the monsters fails at his attempt to kill a deer)
  • poptarts, chips, gum, chocolate cereal and every color of slurpee
  • another cake
There was more, but you get the picture.  The overwhelming presence of cakes made my decision easy.  The best cake, in my humble opinion, was the screaming wedding cake or I Scream Cake as I thought of it.

The movie was adorable and fun, starting with the marriage of Dracula's daughter to a human and moving onto the birth of their child.  Is little Dennis a vampire?  What if he isn't a vampire?  Where should they raise the little darling?  All of these questions are the gist of the movie that evolves into a laugh out loud quest by the parents and Dracula to find the best home for little Dennis.

A couple of people have already made the Monster Ball Soup and it is going to be made here too. Just as soon as the weather cools down...it has been in the 90's and extremely humid in Michigan this month.  I thought about making a cake and layering it with ice cream but didn't want to put on the oven.  Then I remembered our friend, Kurt, bringing an ice cream cake to one of our parties made with ice cream sandwiches.  Perfect!!

I did a google search and found this recipe by Kraft foods.  Ice cream sandwiches, oreos, hot fudge, pudding and cool whip.  Nope.....not at all in accordance with my eating plan but....I scream for this ice cream cake!!

It took me only minutes to put together.  Whisk the melted hot fudge with the cool whip, add the pudding and let mix for 2 min.  While that is mixing crunch up your cookies.  Stir those into the hot fudge mixture.  After that it is just layering the ice cream sandwiches with the cookie mixture, frosting with cool whip and sprinkling with more cookie crumbs.  Wrap it up and freeze at least 4 hrs or until ready to serve.

You might notice that I am not a very good direction follower because I was supposed to lay 4 sandwiches side by side, three times. I read it arrange 6 sandwiches side to side, two times.....I don't know what I was thinking....listen, I did this first thing in the morning LOL...my brain hadn't engaged yet. It still tasted good but yours will be prettier if you follow the directions.

I served this up last night after a family dinner that we hosted so we could spend time with the kids before we left this morning for our vacation. It was scrumptious and yes, I stole a couple of bites that I thoroughly enjoyed.  You and your family will enjoy this too....I promise.

12 Ice Cream Sandwiches
1/2 c. chocolate syrup
1 (8 oz) container Cool Whip (thawed), divided
1 (3.5 oz) pkg instant chocolate pudding
16 oreo cookies, crumbled and divided

In the large bowl of a stand mixer, fitted with the whisk attachment, combine the chocolate syrup and 1 c. of the Cool Whip.  Add the pudding mix and beat for 2 minutes.

Place a 24" piece of aluminum foil on the counter. Arrange 4 ice cream sandwiches, side by side on the aluminum foil.  Cover with half of the cookie mixture, repeat and then top with remaining 4 sandwiches.  Frost with the reserved Cool Whip and sprinkle with the reserved crumbled cookies. 1. I will still eat soup in the summer but certainly not as often as when the cold sets in.
