Leftover Burger Tacos

You have some cheese cubes and salsa left from the appetizer table.

The party was Sunday, we  had already rewarmed some of the burgers and had them with leftover salads and baked beans on Monday.  We had leftover hot dogs and baked beans for lunch and were wanting something different for dinner.

I peeled off the buns as well as I could. Broke them up and put them in the food processor.  Then I pulsed until it was nice and crumbly.

I sauted up some onion in olive oil, then I added the crumbled meat, some tomato paste, water and seasonings.  I let that cook until the water and flavors were absorbed into the meat.  While that was cooking, I used my food processor to shred the cheese cubes.

They turned out wonderfully and made a perfect Taco Tuesday meal.....

Leftover Hamburger Tacos

Leftover Hamburger Tacos

Starting with leftover hamburger patties, crumbled and warmed up with water, tomato paste and seasonings makes the perfect filling for tacos.
Prep time: 5 MCook time: 15 MTotal time: 20 M

Ingredients:

  • 4 (1/4 lb.) cooked hamburger patties, crumbled
  • 2 t. olive oil
  • 1/2 small onion, diced
  • 1 c. water
  • 2 T. tomato paste
  • 1/4 c. taco seasoning
  • pinch of cumin
  • pinch of coriander powder
  • taco shells of choice
  • shredded cheese
  • shredded lettuce
  • chopped tomatoes
  • salsa, if desired
  • sour cream, if desired

Instructions:

  1. Quarter the cooked hamburger patties and place into the bowl of a food processor, pulse until crumbled.
  2. Heat the oil in a large skillet, add the onion and cook until fragrant and softened.  Add the crumbled burger to the skillet along with the water, tomato paste, taco seasoning, cumin and coriander.  
  3. Bring to a boil, cook and stir until water and seasoning are absorbed and sauce is thickened.
  4. Place into a bowl and serve along with taco shells, cheese, lettuce, tomatoes, sour cream and salsa for the family to build as they like.
