My blogging friends and I get together every other Wednesday to share recipes that start or feature ingredients as we work our way through the alphabet.  Let's take a look at the other P recipes being shared today........

Pasta al Limone with an added punch by using Preserved Lemons.  I will be making another batch of these easy Preserved Lemons soon.  I never knew you could make such delicious recipes with them.  So far, I have made Hummus, Loaf Cake, and this pasta three times!!

I still have enough for a couple more recipes that I will be sharing with you soon.  Luckily, it only takes moments to make these, and I have enough left to last while the new jar preserves in the refrigerator.

Pasta with Preserved Lemons

Pasta with Preserved Lemons

Looking for a quick, delicious, and easy meal? I've got you covered with this pasta in a simple sauce made with only 5 ingredients, ready in the time it takes to boil your pasta.

Ingredients

  • 8 oz. Spaghetti Noodles
  • salt and pepper, to taste
  • 1 stick butter
  • 1/4 c. finely chopped preserved lemons
  • 2 T. preserved lemon brine
  • Parmesan cheese
  • Fresh Basil, if desired

Instructions

  1. Bring a large pot of generously salted water to a boil and cook the pasta per package directions.
  2. While pasta is cooking, melt the butter in a skillet over medium heat. Add the preserved lemon and season generously with pepper. Stir in the brine and reduce the sauce to a simmer until the pasta is cooked to your desired tenderness.
  3. Using tongs, remove the pasta from the boiling water to the skillet. Add 1/4 cup of the cooking water and toss to coat. Taste and season with additional pepper and salt if needed.
  4. Divided between to shallow bowls and sprinkle with Parmesan Cheese.
  5. Garnish with fresh basil, if desired, and serve.

  3. Sharing this with my daughter, who is collecting easy, simple recipes for single life. We've always loved a simple noodle dish for comfort, usually garlic and butter, but this sounds fantastic!
