This pumpkin quick bread includes oats for extra texture, fiber, and nutrition. I baked mine up in a jack-o-lantern pan that I pull out of storage and use each Halloween.

Pumpkin Oat Bread
Ingredients
- 3 c. flour
- 1 c. old fashioned oats
- 2 t. baking soda
- 2 t. cinnaspice or pumpkin pie spice
- 1/2 t. baking powder
- pinch of salt
- 3 eggs
- 1 can (15 oz) pumpkin puree
- 1 1/2 c. sugar
- 1 c. milk
- 1/2 c. canola oil
- 1 c. chopped walnuts
Instructions
- Combine the flour, oats, baking soda, baking powder, salt, and spice in a bowl. Set aside.
- In the large bowl of a stand mixer, whisk together the eggs, pumpkin, milk, and oil. Add the flour mixture a little at a time on low speed until combined. Increase speed and mix just until incorporated.
- Pour into two loaf pans (or pans of choice) that have been treated with baking spray.
- Bake in a preheated 350* oven until a skewer inserted in the center removes cleanly. This took 50 minutes for the pumpkin pan and 75 minutes for the loaf pan in my oven.
