I enjoy cooking and spending time in the kitchen, but somedays I just want something easy like these oven-baked BBQ chicken thighs that take only moments of hands-on time and deliver a delicious dinner with little effort.

A Recipe Redo for the 5th Day of Christmas
My brother Dick was in Nashville during our Santa Party this year. He lost his wife, my dear sister-in-love, Jackie, this past August, and I think it was too painful to attend our family gathering without her. We all understand. This was a huge loss for our family.
Before he left, we had him over for dinner. Just the three of us, seeking to comfort each other, sharing memories of dinners and Christmases past.

Baked Honey Sesame Chicken
Bite-sized portions of white meat chicken, breaded, and shallow-fried before being covered in a savory, Asian sauce and baked.
Ingredients
- 1 1/2 lbs. boneless, skinless chicken breasts cut into bite size pieces
- 1 c. cornstarch
- salt and pepper, to taste
- 3 eggs, beaten
- 1/4 c. vegetable or peanut oil
- 3/4 c. honey
- 3/4 c. lite soy sauce
- 1/2 c. ketchup
- 1/2 c. light brown sugar, firmly packed
- 1/2 c. rice wine vinegar
- 1 t. dark sesame oil
- 1 clove garlic, minced
- 1 T. cornstarch (left from the cup used for breading)
Instructions
- Place cornstarch, salt, and pepper into a plastic bag. Add chicken and shake to cover.
- Beat 3 eggs in a shallow bowl and set aside.
- Heat the oil in a large skillet over medium-high heat.
- Remove the chicken from the bag and cover with egg mixture. Place into the hot oil and cook, in batches, until browned on both sides. Remove chicken to a casserole and set aside,
- Whisk the honey, soy sauce, ketchup, sugar, vinegar, sesame oil, and garlic together in a medium bowl and pour over the chicken.
- Bake in a preheated 325* oven for 45 minutes, tossing the chicken every 15 minutes.

Beef and Oats Sliders #SundayFunday
The addition of oats to this ground beef keeps the meat juicier and adds extra fiber to make them more filling. I used one pound of ground beef and a 1/4 c. of oats and ended up with 6 delicious sliders in under half an hour. You can't get carryout that is as quick or as good.

Spinach Pasta Surprise #BundtBakers
I originally wanted to do a red white and blue jello bundt that I could serve up for Independence Day but our fearless leader, Stacy of Food Lust People Love said that while she would allow untraditional Bundts they must still be baked. Hmmmm....that made this challenge a little more....well .....
challenging.
I started considering all of the things that I bake, other than cakes, that would work in a Bundt pan. I considered meatloaf and was planning on going with that when it occurred to me that I had a baked pasta on the menu for Meatless Monday and it could easily be converted to be baked in a Bundt pan instead of casserole.

Citrus Marinated Chicken Thighs for #SundaySupper
Our theme this week is Citrus Recipes That Make You Smile. I can't think of a citrus recipe that doesn't make me smile. Citrus Salad, Mandarin Orange Yakisoba Salad, Citrus Beef Skewers, Chicken Breasts in Lemon Sage Sauce, Orange Chicken, Lemon and Rosemary Pork Tenderloin, Grilled Mahi Mahi with Citrus Marinade, Spicy Citrus Shrimp, Orange Coffee Cake, Pasta with Lemon and Basil. Smiling yet? And this doesn't even list all of the wonderful desserts made with citrus fruits. I had to stop or we would never have time for today's recipe which is sure to keep that smile on your face.
This recipe is healthy, using organic, pure and whole ingredients. It is nearly FMD friendly for Phase 1 except for the addition of olive oil in the marinating liquid. It is quick and easy. Even with the marinating time you will have dinner on the table in less than an hour.
