Oven Baked BBQ Chicken Thighs and the Weekly Menu

 I enjoy cooking and spending time in the kitchen, but somedays I just want something easy like these oven-baked BBQ chicken thighs that take only moments of hands-on time and deliver a delicious dinner with little effort.

BBQ Chicken Thighs

I had pulled out these chicken thighs before heading to my exercise class.  I had no idea what I was going to do with them, but at least I would have something thawed out to prepare for dinner.

We have been enjoying a lot of soups, stews, and casseroles during this cold snap, so I was pining for some warm weather and grilled foods.  Even if the grill did not have 2 feet of snow piled on top of it, it is waaaaayyyyy too cold to be outside for more than a couple of minutes, so grilling wasn't really an option, but BBQ was.

I seasoned these chicken thighs with homemade Rib Rub, which works just as well on chicken as on pork.  You can season your thighs any way you wish.  I went into the refrigerator to get the ingredients for our homemade BBQ Sauce, but saw a bottle of Sweet Baby Rays and went with that instead.  Use whatever BBQ sauce you like.

As I write this post, it is -3 ° outside, so the Weekly Menu will reflect this crazy weather we are having.  The week is looking pretty quiet around here.  Today is Frank's last day taking care of the dive shop since the rest of the dive family was enjoying the Fijian warmth and sunshine.  They are coming home to this freezing weather this weekend. 

Our Angel Face and her parents are in Mexico right now, taking a break from this cold spell we are in.  I am sugarglider sitting, and I am worried that he (Peanut) is on a hunger strike right now.  Normally, Amy takes care of Peanut, but she and Doug are leaving on a cruise to Key West and the Bahamas on Sunday.  I'm feeling a little jealous here as I snuggle under my blanket.

Thursday night, we are taking Nicole and Pierre out for dinner to celebrate Nicole's birthday. Otherwise, we have nothing on the calendar during the evening hours.

Oven Baked BBQ Chicken Thighs

You can still enjoy BBQ Chicken when snow covers the grill, and it is too cold to step outside.

Prep time: 5 MinCook time: 40 MinTotal time: 45 Min

Ingredients

  • 4 chicken thighs
  • salt and pepper, to taste
  • your favorite seasonings, to taste
  • 1/2 c. BBQ Sauce ( I used Sweet Baby Ray's)

Instructions

  1. Season the chicken on both sides and place onto a baking sheet lined with aluminum foil.
  2. Brush both sides of the thighs with half of the BBQ sauce and place in a preheated 400* oven, skin side up, for 20 minutes.
  3. Brush the tops with the remaining sauce and return to the oven for another 20 minutes, until the chicken has an internal temp of at least 165*.
