Sharing Leftovers for the 3rd Day of Christmas
The other day I shared with you this Roasted Vegetable Soup. I had about 2 cups of soup leftover so I decided to use it as a base for this delicious Roasted Vegetable Lasagna. I added fresh baby spinach between the layers for extra color and nutrition.

Our Thanksgiving, The First Thanksgiving and the Weekly Menu starting with Leftovers #LitHappens
We had a very nice Thanksgiving with a large gathering of Family and Friends. It was a festive, casual affair filled with love and laughter. And some tears....for those we love who could not share the day with us due to work, distance, or other commitments and for those who are watching down from Heaven whom we miss more during the holidays, it seems.
The holidays are always bittersweet as you reminisce about days of yore and create new memories that will be shared long after you are no longer present except in spirit.

Baked Mac and Cheese with Ham for the First Day of Christmas
Our Christmas Season continues until January 6th when we celebrate the Epiphany. Until then, our decorations remain, the tree stays lit, and the feasting continues. It is a joyous time of year.
Our feasting this week includes enjoying all the wonderful leftovers from our abundant Christmas Dinner. Tonight we enjoyed some leftover ham and leftover cheese from my cheese tray in a Macaroni and Cheese Casserole. There was some Broccoli Slaw left to enjoy as a side dish.

Preparing for Easter with our Dinner Menu and Weekly Menu using Leftovers
Easter is my favorite Holiday. The Resurrection of our Lord promises Eternal Life for all who have faith and follow him. Spring arrives and new life is bursting forth from the ground and trees that were dormant just days ago. Birds and wildlife are active, feathering their nests and creating safe havens for their young that will arrive this season. The promise of new beginnings surrounds us. Happy Easter!!!!

Serving up the last of the leftover Easter Ham for dinner tonight to our friends the Wronas who are joining us for dinner tonight. This Italian Style Ham and Bean Soup will be our first course.
Now that Easter Week is over, life will be returning to normal here on the Farm...at least for a short while.
