Grilled Cheese with Apple inspired by "The Princess Bride" #FoodnFlix

Inconceivable!!  That I had never noticed any food in the movie, The Princess Bride, the first few times I saw it.  Of course, that was way before my blogging days, so I never had my food goggles on. This time, I watched it with my FoodnFlix club.  The FoodnFlix club is a group of bloggers who watch the same movie each month and then share a recipe inspired by the movie.


Sometimes we watch foodie movies and other times, like this month, we watch other types of movies, keeping an eye open for food inspiration. This month's selection was chosen by my friend, Deb of Kahakai Kitchen.  You can see her announcement post and learn how to join in the fun here.

This movie has been out for 30 years!!  That makes me feel so old.  When our kids were young this was one of the movies that was frequently on at night as we sat around a big bowl of popcorn.  I have to admit that after the first time, when the others would be watching, I would be flipping through magazines or reading a book while they watched.  This was long before the popularity of laptops, otherwise I probably would have been playing a game or blogging while it was on.

This time I gave the movie my undivided attention paying special heed to any food inspiration.  I was surprised how much there was.  For those of you that have never seen this movie (probably because you are too young) it is about a young boy (Fred Savage) being read a bedtime story by his grandfather (Peter Falk).  As the grandfather reads the boy is drawn into the story of a young girl, Buttercup who falls in love with her stable hand, Wesley.  Wesley goes off to find fortune so that he is worthy to have Buttercup's hand.  He disappears and is presumed dead.  Wesley reappears as a pirate to save his beloved from being bound by marriage to Prince Humperdink, whom she does not love.

During this quest, Wesley meets up with numerous characters, some of who obstruct his quest and some of whom give him aid.  We meet a giant, a fencer, a warlord, a wizard and a count who create a debacle of goofiness and fun that is sure to make you laugh out loud,

Food inspiration includes:

  • Cheetos on the headboard of the little boy who is being read the story.
  • chickens on the farm where Wesley works for Buttercup
  • apples waiting to be turned into a pie by Buttercup
  • sheep walking through the kingdom
  • cheese, being eaten by the warlord after he kidnaps Buttercup
  • eels, that nearly eat Buttercup
  • wine, bread, cheese and apples in a picnic lunch that the warlord is eating when Wesley finds him and rescues back his love.
  • lunch of a sandwich and oj being eaten by the young boy as his grandfather takes a sip of coffee and continues the story.
  • stew, being served up in the royal palace
  • the mention of a mutton, lettuce and tomato sandwich being fondly remembered by the wizard
  • melted chocolate covering on a "miracle pill".
  • goats walking through the village amongst baskets of fruits and veggies in the marketplace
  • bowls of fruit including pineapple, pears and mangos and bowls of nuts being knocked off a table in the palace during a sword fight.
As you can see, there was absolutely no shortage of food/recipe ideas.  I decided to make a sandwich and fill it with cheese and apples since these three things were seen more than once in the movie.  Oh, and because I love grilled cheese sandwiches and knew the crunchy sweetness of an apple would add another layer of flavor to this classic dish.



I want to wish all Moms out there a very Happy Mother's Day.  Order up this movie, pop some popcorn, gather around your kids and watch or rewatch this classic tale.  It will provide wonderful Mother's Day memories for years to come.


Grilled Cheese with Apple Sandwich

For each sandwich:

2-3 oz of your favorite cheese, shredded ( I used a blend of colby and sharp cheddar)
2 slices whole wheat bread
butter, room temperature
5-6 thin, half moon, slices of apple, peeled (I used Honeycrisp)

Butter one side of each slice of bread.  Lay one slice of bread, butter side down, on a hot griddle or skillet.  Cover with 1/2 of the cheese.  Layer on the apple slices over the cheese and sprinkle the remaining cheese over the apples.  Top with the second slice of bread, butter side up.  Cook until bread is golden brown and cheese begins to melt, flip and cook the other side until golden brown and toasted.  Print Recipe

BLT Grilled Cheese with Avocado #FantasticalFoodFight

April is National BLT month.  It is also National Grilled Cheese month.  So when Sarah, the leader of our Fantastical Food Fight, chose the theme of BLT for this month, I decided to combine the two.


Sarah instructed that our entry must be a sandwich that contains bacon, tomato and a leafy green.  I decided to use baby spinach as my leafy green.  I also added some avocado slices for a little extra green.  You can learn all about Fantastical Food Fight and how to join by going to Sarah's introduction post.


Layer upon layer of goodness in this sandwich.  Start with a slice of cheese, add the bacon, layer on the spinach and then the tomatoes.  Top this with some avocado and then another slice of cheese. Generously butter the outside of the bread and grill it to a golden brown.


This would make a perfect breakfast, you could even add an egg if you so chose.  It would also be  a marvelous lunch paired with some chips or fries or you could do as I and serve it up with a hearty bowl of Bean Soup that you make from your Easter Leftovers and call it dinner.



BLT Grilled Cheese with Avocado

For each Sandwich:

2 slices whole wheat bread
butter, room temperature
2 slices colby jack cheese
4-5 slices bacon, cooked crisp
small handful of baby spinach leaves
2 tomato slices
3-4 slices avocado

Place one slice of bread on a board and cover with a slice of cheese, bacon, spinach, tomato and avocado.  Place the second slice of cheese on top.  Cover with a second slice of bread buttered on the side facing up.  Carefully, transfer the sandwich to a hot griddle, placing the buttered side of the sandwich down.  Butter the slice of bread now facing up.  Grill until bottom is golden brown.  Flip so that the top buttered side is on the griddle and grill until that side is golden brown and the cheese is melted.  Print Recipe

Grilled Cheddar, Onion and Tomato Sandwich #GrilledCheese

When I worked road patrol in the southwest quadrant of Warren, which borders Detroit's northeast side, I used to love going into this divey little restaurant called House of Reuben.  It had been there for as long as I could remember.  Before I had ever dreamed of becoming an officer, I used to drive past this restaurant on the way to take my kids to school.

It never occurred to me to stop in the place.  As I said, it was small and didn't have much curb appeal. When I started working and was assigned that area, one of the senior officers took me there and OH MY YUM!!

This place had the best Reubens ever!!  They also had great fish and carried smelt which made me do a happy dance.  Their burgers were good. Their pastrami was out of this world.  It became a regular stop for me at dinner time.  They were fast, friendly and understanding when I had to leave before my order was ready and always happy to make my order fresh when I would return from whatever emergency had pulled me away.

One of the problems of working the road, for me at least, was that I got very sick of eating restaurant food every day.  Even good restaurant food gets old when you eat it constantly and are limited to the few restaurants available in the 9 square miles to which you are assigned.  

One day, I walked into the House of Reuben and none of my regular meals sounded appealing to me. They may have had the best Beef Barley Soup I had ever eaten but I was sick to death of it.  I didn't want a sandwich so filled with meat and goodies that you had to eat it with a fork and knife, even though I knew said sandwich was amazing.  I finally settled on a Grilled Cheese Sandwich.  My partner looked at me like I was nuts...who goes into this fantastic deli and orders a grilled cheese?

When the sandwich was put in front of me, I started drooling.  Two thick slices of white bread stuffed with sharp cheddar cheese, bacon, tomatoes and bermuda onion grilled up to a perfect golden brown and melting out of the sides.  I shot my partner a "hah" look and dug in.  It was and still remains the best grilled cheese sandwich I have ever eaten.



I did my best to recreate this sandwich.  I omitted the bacon because it is, after all, Meatless Monday. I used Vidalia onions and a medium sharp Irish Cheddar. The bread is a regular slice Sourdough.  I hope that you enjoy it as much as we did.


This sandwich was made as part of an event for Holiday Fun with our Blog Friends.  April is National Grilled Cheese Month so Caroline of Caroline's Cooking invited us to join her in this celebration. You will find many more Grilled Cheese creations following my recipe.

Grilled Cheddar, Onion and Tomato Sandwich

2 slices sourdough bread per sandwich
butter, room temperature
1 oz medium sharp Irish Cheddar Cheese, sliced thin, per sandwich
2 slices tomato, per sandwich
1 thin slice of Vidalia onion, per sandwich

Butter both slices of bread  Lay one slice down onto a hot griddle or pan.  Cover with cheese.  Add the tomato and onion slices and top with the other slice of bread, butter side up.  Reduce the heat to medium high, and place a cast iron skillet on top of the sandwich, weighing it down.  Cook for 3-4 minutes until bottom is golden brown.  Flip and replace the skillet onto the toasted side.  Cook for another 2-3 minutes, until cheese is melted and bottom is golden brown.  Print Recipe
