The Weekly Menu starting with Christmas!!!

Merry Christmas Everyone and Happy Holidays to those who observe this time of year in other cultures and religions.  May Peace on Earth and Goodwill Among Men be with you throughout the Holiday Season.

I know that I certainly have a lot to be grateful for, not the least of which is that I am able to write and share this post with you after having been hit by a Ford 250 while on my daily walk the day after Thanksgiving.

I can't believe that it will be one month to the day tomorrow and I am well enough to not only post my Christmas and Weekly Menu but I am able to help prepare the food as well.  God is very very good.

So without further ado, here is what we are serving up for Christmas with a lot of help from Frank's sister and our eldest daughter.  Frank took on the bulk of the prep but I was able to get into the kitchen to prep the Kapusta.  The ham is from Costco and is ready to serve.  The Stuffed Cabbage and Smoked Sausage is being provided by Roz.  Frank is in charge of the Cheezy Potatoes.  Amy is bringing the desserts.

We are having dinner tonight at Frank's brother's house.  Monday and Tuesday we will be working with leftovers.  Wednesday we are hosting a gathering for my side of the family as I was in the hospital when I was supposed to be having the Annual Santa Party.  Keeping it simple with ordered in Pizza and Salad.

Thursday, Frank is taking me to Firestarter Casino.  We will stop and see our friend, Sister Maryann for lunch before the Casino where we have dinner reservations prior to a concert honoring Michael Jackson called MJ Live.  We may do a little gambling while we are there.....wish us luck.

Quick and Healthy Butternut Squash Soup and the Weekly Menu including Friendsgiving and Thanksgiving #SoupSaturdaySwappers

 Holidays can be very busy.  This quick and healthy Butternut Squash Soup starting with frozen squash is a time and stress saver.  It takes only a few minutes of hands on time and half an hour cooking time.  It can be made ahead and rewarmed so there is zero soup stress on the big day.

Valentine Day and Weekly Menu

I am getting ready to celebrate Valentine Day here on the Farm.  Today the Angel Face is spending the day and we are going to make heart shaped grilled cheese sandwiches for lunch.   was supposed to spend the day and then tomorrow we were taking her and the Teen to see Addam's Family; The Musical.  Now the Teen has invited her friend (see below) to attend and we will be taking them out to dinner afterwards.

That dreaded COVID bug has bitten Angel Face, Daddy and now Mama....fortunately they are vaxxed and boosted so symptoms are very mild but they are still under quarantine.

Tiger Salad (Laohu Cai) for Chinese New Year #SundayFunday

Hello Sunday Funday Friends.  Today we are sharing recipes to help you plan for your Chinese New Year celebration.  2022 is the Year of the Tiger so I am sharing with you Laohu Cai which translates to Tiger Vegetable.

Chinese New Year 2022 begins Tuesday, February 1st.  Much like our 12 Days of Christmas the Lunar New Year is celebrated for 15 days ending with the Lantern Festival on February 15th this year.

Preparing for the Holidays

Last year the epidemic had our holidays looking very different than they had in the past.  COVID 19 is still affecting how we live our daily lives and it will, again, affect our holidays.  Fortunately, many of us are now vaccinated and able to join together for celebrations again this year.  I am very excited to be planning and hosting gatherings. I"m starting with a dinner for our neighbors to celebrate one of their birthdays on Halloween night.

 It is April Fool's Day but don't let the joke be on you.  Make up some of these candied Kumquats and serve up a Kumquat Martini as a special Easter treat.

Pumpkin Roll and the Christmas Menus

Due to the Pandemic we have been having small gatherings this Holiday Season instead of our usual large parties.  I have so missed having all my family gather for Brunch with Santa this year. I missed not hosting our Choir Christmas party.  I will miss not having a house full of family and friends on Christmas Day.

But we have still had some very nice, small dinners, where social distancing is possible.  The season kicked off with Thanksgiving with 7 of us at two tables served buffet style.

We then had my sister, Dawn and her husband Tom over for dinner that started with these delicious Crab Puffs.

We had my brother, Dick and his wife Jackie over for a dinner that started with Sake and Asian Appetizers.  You will find out more about that after the New Year.

Then we had the Teen's Godparents over for dinner.  Marissa was very excited to present them with this cross she made from sheets of music.  This is also where we enjoyed the Pumpkin Roll for dessert that I am sharing with you today.

But before I share this recipe I want to share my Christmas menus with you.  Our children from Frank's first marriage, Nicole, her husband Pierre and Tony are going to join us for Christmas Eve Brunch.  Normally they would be going to Frank's brother's house for Christmas Eve dinner but, again, due to COVID, plans have changed and gatherings are smaller.

On Christmas Day, Amy and Doug, Jessica, Julien and Melody will be joining the 3 of us for Chritmas Dinner.  The Teen's Aunt, Uncle and Brother will be stopping in for some refreshments later in the evening after others have left.

Pumpkin Roll

Pumpkin Roll

Pumpkin and spice sponge cake wrapped around a buttery cream cheese filling. It is sure to be a hit at your next holiday gathering.
Prep time: 15 MinCook time: 15 Mininactive time: 1 H & 30 MTotal time: 2 Hour

Ingredients

Cake
  • 1/4 c. powdered sugar + more for sprinkling
  • 3/4 c. flour
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. ground cinnamon
  • 1/2 t. ground cloves
  • pinch of salt
  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin puree
Filling
  • 6 T. butter, room temperature
  • 8 oz. cream cheese, room temperature
  • 1 t. vanilla
  • 1 c. powdered sugar

Instructions

  1. Lay a thin linen kitchen towel on the counter and sift 1/4 cup of powdered sugar onto it covering completely.
  2. In the large bowl of a stand mixer, fitted with a paddle attachment, mix the eggs and sugar until thickened.  Add the pumpkin puree.  Turn speed to low and add the flour, baking powder, baking soda, cinnamon, cloves and salt until combined.
  3. Spread onto a 15x10" jelly roll pan that has been lined with parchment paper and sprayed with cooking spray.  Bake in a preheated 375* oven for 15 minutes, until the cake springs back when lightly touched.
  4. Remove from oven and flip onto the linen towel.  Remove the parchment paper.  Starting at the short end, roll the  cake and towel together.  Place onto a wire rack to cool.
  5. When cake is cooled cream together the cream cheese, butter, vanilla and powdered sugar until smooth.  
  6. Unroll the towel and cake.  Spread the filling over the cake and reroll.  Wrap in plastic wrap and refrigerate for at least an hour.
  7. Remove plastic wrap, place onto a serving platter and sprinkle with additional sifted powdered sugar before serving.

Ginger Marinated Tuna with Sesame Rice Steaks and Orange Cucumber Salad #BBQWeek

 Sometimes I cover several events with one recipe which I always look at as a gift to me.  Today I am posting several recipes for one event, consider it a gift to you.

Welcome back.  I don't know how you managed to miss that fantastic raffle all week long.  So, as you saw when you read that first post, our friend, Ellen of Family Around the Table, invited several of us to join her in sharing our favorite BBQ recipes.  We posted this past Monday and Wednesday and today we are sharing our final recipes.  There are over 40 great recipes in all.  Heck, in just this one post you are getting three phenomenal recipes!!


I was thumbing through an old issue of Cuisine at Home and came across this entire meal.  It sounded so amazing.  Each component of this meal, perfectly complemented the next.  I knew that I was going to make all three dishes and serve them together and it was so absolutely wonderful that I wanted to share all three of them together in one post.  

These dishes are very slightly adapted to my family's tastes and to what I had stocked in my pantry on the day I made it.  Cuisine at Home included a recipe for a wasabi compound butter that I think would have been perfect but there was no way I was getting Frank to eat wasabi.  I served this entire meal to our friends, John and Kirsten, who loved it as much as we.  It was a great company meal because tuna takes only minutes to cook to perfection.



Ginger Marinated Tuna Steaks
adapted from Cuisine at Home, Issue #51

1/3 c. rice vinegar
3 T. sugar
3 T. dry sherry
2 T. soy sauce
1 T. chili garlic sauce
1 T. dark sesame oil
2 scallions, white and light green parts, chopped
4 garlic cloves, smashed
4 thin slices peeled ginger
4 (6 oz)  tuna steaks

Place vinegar, sugar, sherry, soy sauce, chili sauce, and sesame oil in a gallon size plastic bag that seals shut.  Shake to combine and dissolve sugar.  Add the scallions, garlic and ginger to the marinade.  Place tuna steaks in the bag, seal and refrigerate for 20 minutes.  

Remove tuna steaks from the bag.  Discard the marinade.  Spray the steaks with cooking spray and grill over hot coals for 3 minutes.  Flip the steaks and cook 2 minutes longer.  Print Recipe

Sesame Rice Cakes
adapted from Cuisine at Home, Issue #51

3 c. cooked jasmine rice, cooled to room temp.
1 T. sugar
1 T. rice vinegar
1 t. cornstarch
1 t. kosher salt
2 t. sesame seeds
2 T. peanut oil

Combine the rice, sugar, vinegar, cornstarch and salt.  Press the rice into a 1/4 c. measuring cup that has been treated with cooking spray to form the cakes.  Place them on parchment paper and press 1/4 t. of sesame seeds onto the top of each cake.

Heat the oil in a large skillet over med high heat.  Add the rice cakes and cook for 5 minutes per side, until golden brown.  Can be served immediately or at room temperature.  Print Recipe

Orange Cucumber Salad
adapted from Cuisine at Home, Issue #51

2 T. sugar
2 T. rice vinegar
1 T. sushi ginger, minced
salt to taste
pinch of crushed red pepper 
1 large orange, supremed
1/2 large, English cucumber, thinly sliced
1/2 c. fresh bean sprouts
small handful cilantro  leaves, torn
2 scallions, white and light green parts, thinly sliced
4  mint leaves, minced

Whisk together the sugar, vinegar, ginger, salt and crushed red pepper in a large bowl.  Add the orange sections, cucumber, bean sprouts, cilantro, scallions and mint.  Toss to coat and serve. Print Recipe

The Valentine's Day Menu

Let me start this post by wishing our daughter, Nicole, a very happy birthday!!  We took her and her husband to dinner last night and had a wonderful visit.  Spending time with them is always a pleasure.

Next Tuesday, one week from today, is Valentine's Day.  I have mixed feelings about this day.  I think it is a great day to remind all of those you love just how important they are to you.  I also think that this should be done much more often than once a year.  I also think that it should focus on love more than romance.  Love is forever and Romance is fleeting.  Love can involve multiple people who make each and every day of your life a little better.  Love can also just be for yourself.  I think we often forget just how special we are and that we deserve to be pampered a little bit.

So, this year, if you find yourself alone; pour a glass of bubbly, draw a nice warm bath, sink in and enjoy spending time with a wonderful person.  Should you be lucky enough to find yourself surrounded by toddlers and tweens romping about the house; bake them up some special treats, put in a  copy of Lady and the Tramp and enjoy a night of love.  Just you and your hubby or significant other?  Why not forget about fighting the crowds and waiting for a table?  Light some candles, pour some wine, break a loaf of bread, cut up some cheese, put out some fruit and spend a quiet evening recalling all the things that made you decide that this was the person with whom you were going to spend the rest of your life.



What are we doing?  We're having a dinner party with dear friends whose love we cherish each and every day.  This is how I show my love....I cook.  It is also how I love myself....nothing soothes my soul like spending time in the kitchen.  So here is what we are serving up.  I look forward to sharing recipes and photos with you later in the month.

The Year of the Rooster...Menu for our Chinese New Year Celebration.

Saturday is the onset of two weeks of celebration for the Chinese New Year.  Chinese New Year is a celebration of Spring and there are traditional, symbolic foods served during the celebration.  You can learn more about it at this website.  2017 is the year of the Rooster and you can read more about this at here.

Return readers of this blog know that nearly 10 years ago we took in an exchange student from China and she has been with us ever since.  We used to take her out to a restaurant that had a huge Chinese New Year celebration each year but for some reason they stopped having their party.  I started having a party here each year instead.  My first party was in 2014 and was a great success. This was my menu that year.  In 2015, Chinese New Year fell on Ash Wednesday so we waited until the following Saturday for our celebration.  Last year, we combined our Chinese New Year celebration with our daughter, Nicole's birthday celebration and threw in a Valentine's celebration as well.  What a great celebration that was!!

This year, Chinese New Year falls on a Saturday so it is perfect for celebrating.  I invited all the kids but haven't heard back from Nicole or Anthony yet.  Saturdays are tough for them as they are both in the restaurant business.  So, while I am not sure yet who and how many are joining in the fun, I am planning the party.....first order of business?  The Menu......
