Y is for Yellowfin Tuna

Yellowfin Tuna is more commonly called Ahi Tuna.  That delicious fish served raw or quickly seared, and the star of sushi and poke bowls in Asian cuisine.   I used it to make this quick, delicious salad perfect for lunch or a light dinner.

Teriyaki Ahi Salad

Teriyaki Ahi Tuna Salad


This event kind of snuck up on me.  I had planned on making Poke Bowls, but then our guests arrived from Denmark.  So I made lasagna to have ready for when they arrived from the airport.  Then I was busy preparing for Thanksgiving dinner, so we had pizza.  Then we had Thanksgiving, and the next three days were spent eating repurposed leftovers.

Finally, on Monday, I was going to make our Poke Bowls....Yellowfin for Netthe and me, and Teriyaki chicken for the guys and kids.  We got up in the morning, and they headed to a mall while Frank went to a doctor's appointment. 

When Frank got home, we headed to the Mall and met them at Rainforest Cafe for lunch.  A huge lunch, I might add.  Then we went to the Sealife Aquarium.  Frank and I headed home, and they stayed at the Mall to do some more shopping.  Around 6 pm, they contacted us and said they were still full from lunch, so they were going to shop some more and grab a light snack on the way home.

Frank and I weren't very hungry either, so he had the last of the Turkey Stroganoff, and I made this salad with some of the ingredients I had picked up for the Poke Bowls.

Last year I celebrated the Letter Y with Tzatziki.

Teriyaki Ahi, Cucumber, and Avocado Salad

Teriyaki Ahi, Cucumber, and Avocado Salad

Fresh Ahi Tuna, Crisp Cucumbers, and Creamy Avocado tossed in bottled Teriyaki Sauce.

Ingredients

  • 4-6 oz. fresh sushi-grade Ahi Tuna
  • 2 T. prepared Teriyaki Sauce
  • 1 small seedless cucumber, diced
  • 1/2 of an avocado, diced

Instructions

  1. Cut the tuna into bite-size chunks and toss with the teriyaki sauce. Let it sit while you cut up the cucumber and avocado.
  2. Add the cucumber and avocado to the tuna and toss to combine.
