Almond Cherry Snowballs #ChristmasCookiesWeek

Each Christmas, we make Mom Klik's Almond Cherry Snowballs.  They are part of my husband's fond Christmas food memories and are now our children's fond Christmas Food memories.  This year, I brought my Angel Face into the act, so it can become a fond Christmas Food memory for her too.

This was a week-long event.  I posted on Monday, sharing Nut Brittle Cookie Bars.  Tuesday, I shared delicious Chocolate Cherry Bubbles .   Today, I am sharing a recipe that I make every single year.  This is my husband's favorite Christmas Cookie.  The one he used to make with his mom when he was a kid.

I first shared my mother-in-law's recipe in December of 2015.  This photo is from that post.  I am redoing many of my old posts as the recipes included in them are no longer printable.  These cookies are on my Christmas platter every single year.

This year, my Angel Face was visiting and helped me with these cookies.  She did a great job.  I'll be handing the reins over to her soon.

Almond Cherry Snowballs

Almond Cherry Snowballs

Tender cream cheese cookie surrounding a cherry and sprinkled with powdered sugar. A perfect addition to your Christmas Cookie tray.

Ingredients

  • 1 lb. butter, softened
  • 1 (8 oz) pkg cream cheese
  • 1 c. sugar
  • 1 t. almond extract
  • 4 cups flour
  • pinch of salt
  • 1 jar maraschino cherries, drained and halved
  • Powdered sugar

Instructions

  1. In a large bowl of a stand mixer, cream the butter and cream cheese until combined.
  2. Add the sugar and almond extract, beating until light and fluffy.
  3. Sift together the flour and salt. Gradually add to creamed butter using the lowest setting on a stand mixer until combined. Refrigerate for an hour or two.
  4. Roll a rounded tablespoon of the dough into a ball. Make an indentation with your thumb or finger and place a maraschino cherry inside. Wrap and roll the dough around the cherry. Place on a baking tray lined with parchment paper or a silicone mat.
  5. Bake in a preheated 350* oven for 15 minutes. Let cool completely and then sprinkle generously with sifted powdered sugar.
