Cherry Crisp

I am lucky to have a daughter with a cherry tree.  Normally this tree is very prolific and I am the happy recipient of all the bounty it provides.  This year was rather sparse.  It only provided enough cherries for this delicious crisp so we savored every bite.

Cherry Crisp

This is a super simple recipe.  The hardest part is pitting the cherries.  Once that is done it takes only minutes before this is ready to pop into the oven.

I like to time mine so I can serve it warm with a scoop of ice cream on top, but it is just as scrumptious at room temperature with a dollop of whipped cream.

Cherry Crisp

Ingredients

  • 3 c. pitted sour cherries
  • 1/2 c. sugar
  • 1/4 c. water
  • 1 T. cornstarch
  • 3/4 c. old fashioned oats
  • 1/4 c. flour
  • 1/3 c. brown sugar
  • 1/4 c. flour
  • 1/2 stick butter, room temperature

Instructions

  1. Place the cherries, sugar, cornstarch, and water into a saucepan over medium heat. Cook and stir until bubbly and thickened.
  2. Pour the cherries into a casserole or baking dish (8x8") that has been treated with baking spray.
  3. Combine the oats, brown sugar, and flour in a bowl. Add the butter and use a fork or your fingers to mix in the butter until it is crumbly.
  4. Sprinkle over the cherries and bake in a preheated 350* oven for 45 minutes, until the topping is golden brown and the filling is hot and bubbly.
  5. Let rest for about 20 minutes before serving.
