I served these carrots up with Lamb Kofte, Lebanese Salad and a bottle of Western Australian Wine. It was the best dinner I made this month.

Roasted Carrots with Chocolate Balsamic Glaze
These carrots are roasted to a tender, sweet, golden brown before being drizzled with a dark chocolate balsamic glaze. They turn an ordinary dinner into something special.
Prep time: 5 MinCook time: 30 MinTotal time: 35 Min
Ingredients
- 1 lb. baby carrots
- 1 T. olive oil
- salt and pepper, to taste
- 1 t. dried thyme
- 2 T. balsamic vinegar
- 1 T. chopped dark chocolate
- 1/4 t. honey
Instructions
- Toss the carrots in the olive oil seasoned with salt, pepper and thyme. Spread onto a baking sheet that has been lined with parchment or a silicone mat and roast in a preheated 375* oven for about half an hour, tossing occasionally, until tender and golden brown in spots.
- Place the vinegar in a small sauce pan and bring to a boil. Remove from heat and stir in the chocolate and honey until melted and smooth. Drizzle over the roasted carrots and serve.
