Irish Minestrone Soup #MoviesandMunchies

Mediterranean Pasta #FarmersMarketWeek

Pasta tossed with garden fresh tomatoes, fresh basil, pine nuts, and feta cheese.  A quick, delicious, warm meatless main meal in less than half an hour.

There is nothing that I love more than coming home from the Farmer's Market and using the fresh bounty that I just purchased.  Today's recipe uses fresh asparagus, sweet tomatoes, and young zucchini tossed with some Boursin cheese and topped with shredded Parmesan.  So good and so easy.....

Maque Choux and a Book Review #LitHappens

This classic Cajun dish is as easy to make as it is delicious.  I used jalapeno peppers instead of green bell peppers for a little added punch.

When my husband saw Creamed Corn on the menu, he wasn't happy.  That was because he was expecting creamed corn from a can.  Imagine his delight when I served up this delicious, homemade creamed corn with parmesan cheese mixed in.
