I made these pork chops for dinner one night when the Angel Face was visiting. She loves pork chops and she really loves baked beans and she really, really loves baked potatoes. It was a very brown dinner, but very delicious and she was very, very happy.
I happened to have a bag of pecan meal in my freezer but if you don't you can make your own by toasting pecan halves or pieces and giving them a whirr in the food processor.

Pecan Crusted Pork Chops with Apples
Bone in Pork Chops, browned and then covered with a lovely pecan crust before being baked to tender perfection.
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 4 bone in center cut pork chops
- salt and pepper, to taste
- 1 T. olive oil
- 1 c. pecan meal (or crushed pecans)
- 1/2 c. panko bread crumbs
- 1/2 stick butter (4 T.) melted and cooled
- 4 small apples, cored and cut into eighths
- 1 t. honey
- 1 t. lemon juice
Instructions
- Wash and pat dry the pork chops. Season with salt and pepper. Heat the oil over med high heat in a large skillet. Brown the pork chops, 2-3 minutes per side. Place into a 9x13" baking pan.
- Combine the pecan meal, bread crumbs and butter. Divide between the 4 chops, patting the crust over the tops of the chops. Bake in a preheated 350* oven for 20-30 minutes, until the crust is golden brown and the chops have reached an internal temperature of 145*.
- While the chops are baking, cook the apples with the honey in the same pan that was used for the chops, over med heat, stirring occasionally, until tender, about 10 minutes. Stir in the lemon juice and set aside.
- When chops are done, place onto a platter, crusted side up and top with the apples.
