This dish was so wonderfully spiced and flavorful that it was almost like eating a dessert. I didn't have any leftovers but if I had I would have turned them into a rice pudding. In fact, I may serve this dish up again when it is just the 3 of us so that I can do just that!!

Cranberry Rice Pilaf
This Cranberry Rice Pilaf is full of Fall flavors and the perfect side dish for your Holiday table this year.

Ingredients
- 1 T. olive oil
- 1 cinnamon stick
- 1 clove garlic, smashed
- 2 c. Royal Blend Rice
- 1 c. apple cider
- 2 c. water
- salt and pepper, to taste
- 1/2 c. dried cranberries
- 2 small apples, cored and chopped
- 1 sweet onion, chopped
- handful of chopped parsley
Instructions
- Heat oil in a large pot over medium heat. Add cinnamon stick and smashed garlic and cook until fragrant. Add onions and apple. Cook for a few minutes until onion is translucent and apple is starting to soften. Stir in rice, cider, water, dried cranberries, salt and pepper. Bring to a boil. Reduce heat to a simmer and cook until liquid is absorbed, 15-20 minutes. Stir in most of the parsley saving some for sprinkling on top as garnish.
