Chopped Salad with Bacon and Blue Cheese
This delicious chopped salad with homemade creamy herb dressing is the perfect start to a meal or addition to a brunch buffet. You can serve the bacon and blue cheese separately so people can add them according to their tastes.
Ingredients
- 2 heads Romaine Lettuce, chopped into bite-sized pieces
- Several Compari Tomatoes, diced
- 1 Large, seedless, Cucumber, Diced
- 8 slices bacon, cut into bite-sized pieces and cooked crisp
- 1 container Blue Cheese
- 1 c. Miracle Whip
- 1/2 c. Buttermilk
- 1 t. chives, chopped
- 1 t. parsley, chopped
- 1/2 t. dried dill weed
- 1 t. minced garlic
- 1/4 t. onion powder
- salt and pepper to taste
Instructions
- Combine the lettuce, tomatoes, and cucumber in a large bowl. Add the bacon and/or cheese, if desired. Alternatively, place the cheese and bacon in serving bowls to pass.
- Whisk together the Miracle Whip, Buttermilk, chives, parsley, dill weed, garlic, and onion powder. Taste and season with salt and pepper, as desired.
- Pour the dressing over the lettuce mixture and toss to coat.
