Chocolate Covered Cherry Cookies
Ingredients
- 1 c. flour
- 1/2 c. baking cocoa
- 1 t. baking powder
- pinch of salt
- 6 T. almond paste, broken into small pieceslas
- 1 c. sugar, divided
- 6 T. butter, room temperature
- 1/2 t. vanilla
- 1 egg
- 1 1/2 t. cherry kirsch
- 30 Maraschino cherries, drained, 2 T. juice reserved
- 1/4 c. water
- 4 oz. chocolate chips
Instructions
- Whisk together the flour, cocoa, baking powder, and salt. Set aside.
- Place the almond paste and 1/2 cup of the sugar into the large bowl of a stand mixer, fitted with the paddle attachment. Beat on low speed until the almond paste is crumbly. Add in the butter, half at a time, and beat until the mixture is pale and fluffy.
- Add the vanilla, egg, and kirsch. Beat until smooth. Turn the mixer to low and gradually add the flour mixture until combined.
- Portion the dough into 30 balls spaced evenly on cookie sheets lined with parchment paper or silicone mats. Press a cherry into the center of each cookie ball, flattening them. Place the trays in the refrigerator while you preheat the oven to 350*.
- Bake the cookies for 12-15 minutes, rotating the pans halfway through the cooking time. When edges are set and cookies are puffed, remove from the oven and let cool on the baking sheet for a couple of minutes before removing them to a wire rack to cool completely.
- Combine the remaining 1/2 cup of sugar, the reserved cherry syrup, and a 1/4 cup of water in a saucepan over med-high heat. Bring to a boil, stirring until the sugar is completely dissolved. Remove from heat and stir in the chocolate chips until melted.
- Drizzle the glaze over the cherries in the cooled cookies. Allow glaze to set before serving.

DeleteCordial cherries were my favorite holiday treat as a kid. These cookies remind me of that candy.
